Just investigated the veg drawer at the bottom of the fridge and have made curried carrot and parsnip soup, and am part way through making two small broccoli quiches. Made the pastry and prepped the 3 slightly wobbly mushrooms and half an onion with a bit of grated cheese (with mould cut off the edge). Will bake when oven goes on for tea. Also started a veg scraps bag to make stock, the amount of stock cubes I get through is stupid, so this is an area I'm going to try to develop. Am now having a rest. Hope everyone is enjoying this lovely day0

Trying to stay out of the supermarket for as long as possible. We both fancied a roast dinner today, so using what we already had in stock, I made a lentil loaf which we served with Brussels tops, parsnips, roast potatoes and gravy. The Brussels tops and parsnips came from the allotment this morning. I went for some sprouts but some little creature had eaten the stem clean but fortunately left the tops intact. Mind you, I prefer the tops anyway.
The lentil loaf cost about £1 to make and I cut six good sized slices and individually wrapped and froze four slices ready for future roast dinners. It was delicious, I am now stuffed and very happy that I have not spent a penny today.Debt 04/11/22 - £0.00

I'm quite proud of myself, I haven't been to the shops since Sunday (it's a bad habit of mine, if I see a shop I have to go in). Anyways, we only spent 1.35 on the compulsory new years eve strudel yesterday. Had a nice lentil soup with smoked gammon today and the leftovers will be enough for a couple of days for lunch....0

Hi Beenthere_donethat, I cooked 1 cup of red lentils in vegetable stock until soft. In the food processor I chopped 1 small onion, 2 sticks of celery and 1 carrot. I put chopped veggies & cooked lentils in a bowl and added quarter cup of ketchup, 2 tbs of Dijon mustard, 2 tbs soy sauce, 2 tbs nutritional yeast and half tsp Italian herbs. Finally I added one cup of oats, mix together, put in a loaf tin and cook for 40-50 minutes at gas mark 6/180 degrees. Sometimes I add courgette instead of celery.Debt 04/11/22 - £0.00
