Well if you look at your clubcard account online you can see how where and when the points were accumulated and also if any were redeemed, so that might help your calculations rather than rely on memory

It's not memory I counted up through my bank statement cause I only used that tesco debit card for online deliveries I never use it anywhere it was purely set up for online shopping

The reason these are not all showing under the "bank" on your Clubcard account or Clubcard statement is, that you are also handing over your standard Clubcard when you shop in store. There is no need to do that.

This is part of the explanation hence why I know cause I only use it online.

Lets just for arguments sake they have mucked up. You've not checked on your balance for a whole year. You need to take some personal responsibilty for that.
Either you dont really care what your balance & accept what they tell you or you keep on top of it & check on a regular basis. You cant have it both ways.
