PJ - can this be made with other beans? I don't have any black turtle beans and would rather not buy more beans as I have loads of different ones already in the cupboard.

No idea but you could try. My recipe is authentic - I got it from a Cuban-American friend we stayed with in Miami. I forgot to mention that the beans are DRIED so you would need to be careful substituting other dried beans because some, like kidney beans, need to be boiled for 10 minutes to destroy toxins.

I buy my dried black turtle beans in W8trose for £1-ish per 500g bag. You may find them cheaper in health food shops but I haven’t seen them.

Thanks PJ. I generally use dried beans too. In fact it's all I've got at the moment! Unfortunately I don't have a health food shop or Waitrose locally. Last time I was in Waitrose I got a couple of bags of mixed beans so might give it a go with those! Probably just half the recipe so I don't waste them if it doesn't work out.
  • I made a butternut squash, sweet potato and carrot soup yesterday. Such a beautiful colour when it was blended up at the end.:A

  • Really cheap ribsticker is a plain suet pudding (works as well with vege suet as with animal suet) served as a starter with a good gravy or as pudding with golden syrup and custard. It was my dads favourite both ways. You can buy a cylindrical pudding sleeve to save having all the pfaff of pleated greaseproof paper and a pudding cloth but that works well too. It's good to store for a few days in the fridge and cut slices off to reheat but needs to be kept covered as it tends to dry out and isn't so nice. Very old fashioned and probably not considered as healthy in this day and age but it keeps you fuelled with energy for hours!

Butternut squash soup - yes! I don't think I've made any for at least a year though. I feel inspired to do some souping soon!

I've never enjoyed sweet potatoes though. I know they're healthy but I'll stick to carrot for my carotene intake.

  • A couple of our favourites in our house is sausage casserole with mash tatties and Dead mans leg ( jam roly poly!!) with thick home made custard, making me hungry now!!
  • Ooh, cauliflower cheese is another favourite of mine. Mac and cheese too.

I'm vegan so I use vegan cheese and almond milk but it tastes the same as how I remember the dairy version.:)

    Lentil shepherd's pie too.

I was being very lazy so I bought a bag of butternut squash and sweet potato already cubed and I didn't even roast it first.:o:D

It does taste nicer if you roast the squash sliced in half in the oven drizzled with olive oil beforehand.

  • Here, our faves are:

    Thai chicken or vegetable curry
    Lamb curry (in the slow-cooker)
Lamb or Venison stew - usually with a lot of redcurrant jelly
Squash and chickpea curry - 1 butternut squash making about 6 meals, so very economical
    Tuna pasta bake
    Puds:
Steamed puddings (in the microwave, takes about 20 minutes including the prep)
    Bread and butter pudding
    Apple or plum crumble

    Oh yes, soup

Soup season starts here in this house tomorrow . Had an order in work for 20kgs of broccoli florets today, so guess who got a bag full of broccoli stems to bring home FOC?

Along with two hands of bananas which are so ripe their skins are splitting - banana bread with chocolate chips

Love, love , love winter cooking :D
