What happens if I don't top-up my adblue?

    Are you taking the pee?.

    Actually, how does the car know you have added AdBlue?. What would happen if you simply filled it with water?.

    Interesting point. I bet it wouldn't have a clue. In fact, reading online, adblue is 67% water anyway...

    "...if the car’s exhaust sensors pick up too much emissions, then you’re going to run into problems." Maybe you can't just use water then.

    Of course it would "know". The amount of exhaust contaminants is measured and if the SCR isn't doing it's job because no DEF such as Adblue is being used then you'll soon know about it.
