4kWh overnight is not unreasonable. The immersion heater will be around 3kW and would likely be on for around an hour if untimed.
4kWhr per night would be 120 for the month. Of course the figure could have been 4.9, in which case you're looking at 150 for the month. (The water heating will dwarf any fridge consumption).
Still not 189 or 261 though is it? Is the cold water coming in really that much warmer at the moment?
Keep doing this daily for a week? Maybe some days you've used all the hot water and so that night it takes longer to get the water hot, and some days you've half a tank of warm water left over so it doesn't take as long to get it heated up again.
The more readings you take, the greater understanding you're going to get.
If you can't get your IHD going, get a monitor that'll measure the pulsing LED on your meter and you'll have a live consumption reading 24/7!0
