    We love liver, but I often overcook it when I do it in a pan.

    This week, I put it on my George Foreman, it cooked really quickly and was absolutely delicious.
    Even better for me as I do Slimming World and I needed no flour of fat to cook it in.
    I will be doing it that way again.

    sorry, i can offer a different recipe other than good ol liver bacon and onions, but just wondered if anyone else knows of this, but i recently bought some reduced lambs liver from sainsburys still had a couple of days on it, so froze it. when i took out to thaw i noticed on the tiny label 'product previously frozen , not suitable for refreezing'. i never see this before, and chucked the 2 packs i had away. i wondered if anyone else has seen this, and if butchers are the same?? it got me thinking what if chicken or anything else was previously frozen, then thawed then has a label to say suitable for refreezing. am i just being naive here??? lol

    I would freeze some but in small portions.
    I use it chopped up in spag bol or dishes like that. It gives a good flavour.

    Liver and bacon with onion gravy :drool:

    I'm sure it could be made into pate, Weezl has a good recipe for one made with chicken livers and lambs liver isn't too strong.

  • Ooh - we love our liver in this house! It can definately be frozen - divide into portions and pop into freezer bags. Liver and onion, liver, bacon and onion, add a tin of chopped tomatoes to either of these for a bit of a twist on the classic. If you have a dog dry some of it in thin strips in a low oven - you'll then have an extremely well behaved dog for just as long as the treats last! For pate, cook off some of your liver until JUST cooked through. Once cooled pop it into the food processor with some fresh herbs of your choice (A little rosemary might work well) and a dollop of cream or creme fraiche. Blitz until smooth, season to taste. Very tasty.

  • If you really can't use it, send it to me - we eat tons of it, entirely by choice and I really can't think of a more under-rated food source. It's still plentiful, cheap, versatile and at only 2 or 3% less protein than the most expensive prime steak, has to be one of the best buys around.

    Is there anything better on a cold winter's night than classic liver and onions, mashed potatoes, lashings of thick, rich gravy .... I like to add a little red wine to the gravy as I just feel that it gives a 'feel rich' fillip to what is rightfully a great cookery classic.
  • LIVER PATÉ

    Serves 2

    INGREDIENTS

    250g of liver
    2 onions
    2 cloves of garlic
    1 tablespoon of butter
    ½ a teaspoon of mixed herbs
    Ground pepper to taste

    DEFROSTING

    If using frozen liver, defrost it. This takes 4 hours at room temperature or overnight in the fridge.

    METHOD

    Peel the onions and chop them into tiny pieces. Peel the garlic and chop it into tiny pieces.

    Put the butter into a saucepan on a low heat. Add the onions and garlic. Cook until they are soft. Add the liver and herbs. Cook gently for 10 minutes, mashing it together with a wooden spoon to check that it is cooked through.

    Put everything into a bowl and mash it together until it is spreadable and to your taste. Season with the pepper.

    Serve cold on hot buttered toast.

    ADDITIONS & ALTERNATIVES

    Add 1 tablespoon of sherry when the liver is nearly cooked through.

    TIPS

    If you cook liver on too high a heat, it will turn out like rubber. This will keep in the fridge for a day.

    IMPORTANT NOTE

    Liver pate is unsuitable for pregnant women.
    The acquisition of wealth is no longer the driving force in my life. :)

  • Thanks folks I have never tried cooking Liver before, I quite like the sound of liver & onions but dont know where to start. Do you fry the liver or braise it slowly all together in a dish?
