If that deal is acceptable to you, it's a good way to haggle - they mightn't be able to do exactly the same price/data, but they should do similar - I've done this with EE in the past.

What on earth do you need 512GB for? Especially as this phone has a micro SD card slot.

Nope not a chance lol
Just one thing if you get a mobile from someone like mobiles.co /affordablemobiles etc EE will not let you port your number as you are on EE already
The way round it is get a free payg sim from say 02 port your number there then port back to EE

I was advised to wait until September as that is when the new Iphone will be released. Once that is released all other phones will have the deal prices reduced. Not sure if this is right or not but am going to hang on and see.

Dont really happen instantly, price drops over time .
Depends upon the take up of the new model and last Iphone was below the past models .
