..but these are all version 8.1.0, rater than 9.0, which presumably won't give me anything more tan I have. Only version 9.0 is Vodafone (uk). I would gues trying this might risk bricking my phone?

It shouldn’t brick the phone but is unlikely to give you WifiCalling (and will have some Vodafone bloat).

Nothing stopping you trying XEU if you’re confident in using Odin. It’s the firmware version that matters, not what version of Android it is.

Just in case it's of any use to anyone I can tell you that I have a 3 contract SIM and an Honor Play phone. I've not used the 3 In Touch app but out of interest I turned on wi-fi calling in the menus on my phone, then turned on airplane mode, then turned on wi-fi and managed to make a call, so presumably wi-fi calling is working for me.

WifiCalling (and VoLTE aka 4G Calling and Supervoice) will work on almost all reasonably recent Honor and Huawei handsets (models going back at least 2 or 3 years iirc) irrespective of network supplier or sim free.
