I made muffins from the basic Susaim Reimer recipe and added some coconut and yippee they are fine, so thanks Foxy for your tips, still reckon they would be better if I get another muffin tin as well.
So, was gonna freeze some, do they freeze ok? Should I remove paper muffin case b4 freezing?

Hi Nettles, There are loads within this thread ? Here is one of Thriftladys recipes I have made myself and they are gorgeous. I added a king size mars in for good measure . I have copied and pasted it from my word doc, so Don't know how to add quote bars in!

good banana muffin recipe which can be made in a cake or loaf tin if you give it a bit longer in the oven. Thriftlady
Btw, you can freeze bananas for baking .Just put them unpeeled in a bag in the freezer.I always do this with over-ripe ones-perfect for baking.
Banana Muffins/Cake/loaf
Put in a large mixing bowl
10 oz plain flour
1 tsp baking powder
1 tsp bicarb
1/2 tsp salt
In another bowl mash 3 bananas(the riper,the better)
Add
4 oz sugar
1 egg,beaten with a fork(I never use the egg as dd allergic-you can replace it with 3-4 tbsp of milk)
2-3 fl oz milk
3 fl oz vegetable oil or melted butter
Add the liquid ingredients to the dry and combine thoroughly,BUT be careful not to over-beat,on no account use an electric beater,the mixture should look quite lumpy.
Line a muffin tin with muffin cases,or grease the cups well and fill about 3/4 of the way up.Bake at 190-200c for about 25 mins.
If you want to make a cake pour mixture into a greased 1lb loaf tin or a 7 inch round cake tin and bake for about 35 mins.check for doneness with a skewer-if it comes out of the centre of the cake clean it's cooked.
I usually double up the mixture,so I'm not entirely sure about the tin sizes ,I'm afraid.
You can obviously add chopped nuts,raisins,dried apricots or choc chips.Some mixed spice is nice too. ENDA little nonsense now and then is relished by the wisest men :cool:

Just found this and tried it-yummy!
7oz S.R flour (or gluten free flour)
1 teaspoon baking powder
5oz Vanilla Fudge
3 eggs
3oz melted butter
1oz light or dark brown sugar
Icing
2oz butter
1oz golden syrup
2 tablespoon milk
7oz icing sugar
1oz cocoa powder
1 Put fudge in a microwave safe bowl and microwave
for 2-3 minutes
2 Put other ingredients in a separate bowl and whisk untill smooth
3 Beat in melted fudge
4 Put into 18 mini muffin cases or 7-8 large muffin cases
Bake 10-12 minutes for mini ones or 15-20 minutes for large
ones.
Icing
1 Melt butter, Golden syrup and milk together
2 Sieve Cocoa and icing sugar together and beat
all ingredients together well. Spread over muffins
and let set0 -
anyone got a choc chip recipe? do i just sub sum cocao powder for flour n add choc chips??? thyanks0

A Muffin book by Sue Reimer ISBN 0-9528858-2-4 is a good start.
Here is the choc chip recipe from it
9oz plain flour
2 teasp baking powder
1/2 teasp bicarb soda
1/2 teasp salt
6oz sugar
5 tablesp cocoa
1 egg
250ml milk
1 teasp vanilla essence
90ml veg oil
Heat oven to 200c/ Gas 6 /400f
In a large bowl sift all the dry ingredients together
In another bowl mix all the wet ingredients together
Pour wet in to dry and mix until combined. (Mixture will be lumpy)
Fill muffin cases 3/4 full/ springle with choc chips
Bake 20-25 mins until tops spring back when pressed gently.NO to pasty tax We won!!!! Just shows that people power works! Don't be apathetic to your cause!0 -
