Veggie Fritters
320g courgette (about 2 courgettes)
210g grated carrot (about 2)
150g crumbled feta
25g finely grated parmesan
1 tbsp honey
3 medium eggs
70g wholemeal spelt flour (think i used plain flour)
salt and pepper to taste
2tbsp virgin olive
Grate courgettes and using a tea towel, squeeze out as much liquid
as possible.
Place courgettes, carrot, feta, parmesan and honey in a large bowl.
Crack in the eggs and mix well.
Heat 2tbsp of oil in a non stick pan and spoon 60ml of mixture into pan. Slightly flatten. Do 3 or 4 at a time. Cook for 3-4 mins until golden brown then flip and do other side.
When I made these to freeze, I didnt let them get too brown and then froze in a large container with greaseproof in between layers.
When defrosted just fry off to completely warm through and browned to your taste.
I guess once they are frozen, they could be bagged up to take up less space.

That's making me think of fishcakes (the tinned tuna/left over potato variety) with fresh fennel leaf, maybe a bit of sorrel - hurry up courgettes !

I potted on my chilli and peppers to their final pots today. Only have a few toms left to pot on which I might leave outside as no room in the greenhouses. I am worried about blight - if it is airborne would I be increasing the risk of it getting into my greenhouse if I have toms just outside the greenhouse? Not had problems with blight before but the area we have moved to is definitely damper.
I am another one with far too many courgette plants. I have 4 green and then decided to do 4 yellow ones. All planted out a while ago.
The green ones are further along and I am already picking them. We had 3 today and I made a lovely ratatouille with the courgette and homegrown shallot plus shop bought peppers and chilli oil.
I will definitely try the fritters as they sound lovely. I was planning on dehydrating rather than freezing the inevitable glut. Has anyone tried dehydrating them with success?0 -
I guess it depends on what you are going to use your courgettes in when thinking of freezing. We tried one year and it just came out as mush so didnt bother again.
Id like to have a go at some kind of chutney this year.
Isnt it a brilliant feeling........making something tasty to eat with what you have grown yourself? I love it!!
I have an elderberry tree opposite my plot which is just beginning to get the elderflowers on. Every year I intend making some elderflower fizz and have even got as far as picking some one year. Thats as far as it got. :rotfl: Has anyone made any? Got a recipe?
I got my pak choi planted out but not much time for anything else.

So after being pumped full of steroids on Thursday, and getting quite a lot done on Friday, yesterday was the inevitable come down - so all I got done was mixing up some more potting compost with my knuckles (almost joking). Much better this morning, might get those courgettes dealt with...
My experience of blight is that generally in the greenhouses I'm fine until the end of the season when the inhabitants of the old leaky one start to become affected. The key is plant hygiene - keeping good airflow by removing the lowest leaves, removing dead/decaying leaves promptly and being careful not to spread anything (eg spores) between plants
That reminds me, further tying in & pinching out to be done here today - but a day of gentle fettling to be sure (I might get Mrs Un to hide the strimmer battery).

It's the best - even if it's just a sprig of rosemary on bought in potatoes (which reminds me - the rosemary needs a hard prune)

Courgette soup is lovely and freezes well. It will make any soup taste creamy as an addition (and soup is my go-to lunch in winter) so I might make chicken soup and add some to that too. I must be disciplined about using them. I also have 4 of each colour - and a yellow cucumber!
I spent most of yesterday weeding but must get on with the rest of that bed today. And plant some more salad crops...Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

I made elderflower cordial yesterday / this morning (let it seep/stew/whatever overnight). My dad has an elderflower tree and was planning to de-head the lower flowers anyway, as when the berries drop off they get tramped in the house and stain the floor. He was just going to compost the flowers so I nabbed a massive bag of them. Was a bit of a faff getting the blackfly off them and I got fed up of that but as I sieved the cordial through muslin I don't worry too much. No recipe for elderflower fizz, but the cordial was 1.5 litres water, 250g Stevia (I don't use refined sugar but there are plenty of recipes that you can find the correct ratio), zest of 2 lemons & 1 lime, and about 20 elderflower heads. Let it steep overnight, sieve through muslin, bottle. Job done. I'm going to add some of it to my Kombucha as a second ferment.
I also have a lovely courgette chutney recipe I'll dig out if you like. Made tons of the stuff last year.
Not much going on in my garden - I did pot up my (pathetic, piddly) aubergines into final pots in the greenhouse yesterday and ditto about half of my peppers. Think I might have sowed too many pepper plants so need to find new homes for a few I think. Unless I shift some of the tomatoes outside, and then I can squeeze peppers in pots inside.
Delaying sowing my second batch of French climbing beans until next weekend as the weather looks a bit rubbish this week and I've only been hardening them off a few days so they'd probably snuff it in shock.0 -
