The green bits occur when the upper part of the carrot root pushes itself up above the top surface of the earth and it's the exposure to daylight which causes this. The whole root needs to be below the surface and when growing carrots need to be checked regularly and if necessary slightly earthed up to cover the roots completely and prevent this daylight exposure.
Once it's happened there's little you can do about it - covering them up won't make the green bits disappear, so just cut off the green part before eating.0 -
Some varieties of carrots are more susceptible to greening than others. If I get the odd one that's proud of the soil and turns green I just cut that bit off and use the rest as I don't think anything works to turn them back to orange.
I'm not sure where in the country you are but here in the south I only pick them as needed, they last until feb next year.
Watered the greenhouse and polytunnels - that all, and picked raspberries and carrots, I've got some dwarf beans in the fridge from yesterday, plus some HG tatties, so that's tea sorted with a bit of fish.0 -

I've just received a blight warning this morning. I think this is the trigger which will persuade me to pick all my remaining outdoor tomatoes.......when it actually stops raining.0

Blight warning here for the last three days which is both apt & convenient as I also feel shocking (chemo) so I'm biding my time again, should take a further week to clear if I'm sensible

Thank you all for your feedback on the carrots. Tomorrow, I’ll lift a mutant and use what I can salvage.
Wednesday, I harvested the last of the ripe tomatoes from our bush. It still has several hard, green tomatoes on it - how long should I wait before giving up on them ripening? I will (eventually) make green tomato chutney with whatever remains. We’re in outer London, BTW.
Many thanks.

Carrots - in theory there should very little green unless they were poking out of the ground. I tend to graze on things like carrots, but I just eat around the green
Tomatoes - if they're lime green they're less likely to ripen naturally, I tend to bring them in (from the greenhouse) and leave them out in the kitchen. It's supposed to start getting cold at night from the middle of next week, but you're probably protected from that

Does putting un-ripened tomatoes in a brown paper bag with a banana not speed up the process,i am sure i read it somewhere.0

Yep - should do, but the effect is not banana specific. Ripe fruit emits a gas (quick google: it's ethylene) so the banana is providing the ethylene and the bag is concentrating it round the tomato.
