Oh yes, silken tofu is definitely better for desserts and anything creamy. I've got quite a nice moussaka recipe which uses silken tofu and pine nuts as the topping, if you still have some left over and aren't sure what to do with it?
Also, we have homemade pizza about once a week because I'm a hopeless pizza addict! But even though we had the ingredients at home, and weren't suffering too much to cook at all, take-away pizza still has that special place in my heart the day after drinking too much wine :rotfl: I'm sure I'll grow out of it one day!Original mortgage: December 2017, £203,495

Runders - if you freeze silken tofu, the texture changes and it goes kind of spongy. If you then deep fry it, you get something a bit like the crispy tofu you get from Chinese takeaways, but if you don't want to deep fry, you can still use it in a stir fry and it doesn't disintegrate as it would if you don't freeze if first.0

Mr julicorn has already gotten paid, and I should get paid sometime today. I maaaayyyyy have entered my income into YNAB already (naughty, I know!) because I couldn't wait.
Managed another overpayment of £550 from Mr julicorn's account, which is awesome because a) it's above our target, and b) with our regular payment going out tomorrow, it will get the balance down to below £192k. This also means that we may be able to get to below £190k in September, with a bit of a push! That's my next goal to work towards.
In other news, this week has been quite hectic, so I've not even really had the chance to catch up on everyone else's diaries yet. I guess that means I'll have something fun to do on the weekend!Original mortgage: December 2017, £203,495

Hi julicorn, just caught up with your diary and your progress is amazing
I’ve never heard of the surprise type holiday before, although have had a holiday where I’ve known the location but not the hotel and that worked out ok.
Also thanks to PP for the curry recipe, I’m going to have to try that one!
Have a good weekend.0 -

Thank you so much! I find keeping a diary on here and all the support really motivating.
Also, the surprise holiday was amazing, I can really recommend it. We want to go on another one, but might not be able to next year (we're already planning on visiting Budapest and Japan), so it will probably be 2020Original mortgage: December 2017, £203,495
