Which fresh cheese tastes most like aged cheese?

Options
Can I ask if anyone knows which of the following cheeses taste most like a regular aged cheese ie mozzarella?
Cottage Cheese, Cream Cheese, Fromage Frais or Ricotta?

    None of them tase like Mozzarella in my opinion. Mozzarella is not aged really in the same way as traditional cheeses so not really sure what you mean by similar to aged cheese ie mozzarella?

    Cottage cheese has a totally different texture and tastes similar to Ricotta.

    Cream cheese is a bit like mascarpone taste

    Fromage Frais tastes similar to cream cheese but is less in fat.

    Do you think you could use Cottage cheese rather than regular cheese on a margherita pizza?

    Definitely not, its texture is all wrong and it wont melt.

    Why do you not want to use mozzarella?

    I would use something that melts well like Cheddar or Edam

    Because of Tyramine I do not want to use Mozzarella as the pizza shops get the Mozz in and its always older than 1 week. So even in ricotta after 1 week can tyramine can develop? If I buy it in the store how do I know how old it is?

    Does tyramine also develope in dairy free cheese?

    A lot of pizza shops' "mozzarella" will actually be cheese analogue that they mix up in the afternoon from a powder. I don't know if that will produce tyramine.

    You can actually make mozzarella at home quite easily in an hour or less, it's just milk (ideally non-homogenized, low temperature pasteurised or even raw milk if you can get it (it's illegal in Scotland)), citric acid and rennet.

    Edit - apparently unpasterised milk/cheese may be higher in tyramine.
    Edit 2 - to correct a misplaced plural possessive apostrophe. Hangs head in shame.

    Monterey Jack is aged about 6 weeks. ... Monterey Jack has lower levels of tyramine, a compound in many cheeses that is associated with headaches, than most cheeses. This makes Monterey Jack a good cheese choice for migraine sufferers.

    Thanks, I just know I get headaches from eating margherita pizzas (even though the pizza shop said they use Mozz cheese) and cheese sandwiches but they are my fav foods so was trying to find a way I could still eat those things by finding a lower levels of tyramine Cheese or tyramine free cheese.
