Share your vegan Christmas Dinner ideas.

Hiya...would love to know what all you lovely vegans/veggies on this site cook for Christmas Dinner.
Being a vegan myself I usually make a traditional nut roast or veggies in filo pastry for my family.
Anyway I want to try something a bit different this year and would love to hear what other vegans/veggies cook.
Please note this is not a debate about vegans versus meat eaters and I just won't get into that 'debate' Anyone reading wanting to 'discuss' that then please start your own thread!

I don't believe in the concept of hell, but if I did I would think of it as filled with people who were cruel to animals.

  • Thanks Pink-winged for that. I've got a few vegan recipe books but sometimes they don't always taste as good as they look. Just thought if someone had a recipe a bit different it would be nice to share and maybe try.

  • We usually have the Redwood "turkey" roast, with HM stuffing, gravy and lots of veg sides. Last year we had pumpkin pie for dessert, which was excellent.

    So, pretty traditional fare, except veganised. I might try making my own vegan "turkey" this year.

    I hadn't even thought about it yet, but now you've bought the subject up I'm really getting excited!!:T

    I hope someone else puts a good idea on here as I fancy something different. Don't fancy the pretend Turkey though unless I call it something different. does it look like real dead Turkey? That would really put me off:eek: Yucky Yucky! xx

    I'm going to look at those threads Pandora gave and see if there's anything on there I might want to try. I would love to see though what other vegans have. Wonder if it's the traditional nut roast like me? :D x

  • There are a few pics of a vegan "turkey" with recipes HERE, also the pumpkin pie recipe that I used is on the same page.

    The Redwood "turkey" looks like this.

    BBC Good Food puts out a special Vegetarian Christmas issue every year, and there are good ideas in there as well. (Haven't seen this years yet.)

    Anyone who'd like to share their nutloaf recipe, feel free! That's one thing I haven't tried yet.

    for my christmas dinner i like making cauliflower cheese with lots of paprika sprinkled on the top to give it flavour - i also have roast potatoes, roast parsnips, homemade mushroom stuffing, swede & carrot mashed and peas as well as bread sauce and veggie gravy (made with wine!!)

    i have got a great recipe from Annabel Karmel (babies and toddlers cookbook!!)

    Rice, Veg & Cashew Nut Slices

    75g brown rice
    1 small onion
    1 med carrot
    1/2 oz butter
    2 oz mushrooms
    2 oz wholemeal breadcrumbs
    2 oz cashew nuts
    2 oz cheddar cheese
    1 egg

    Cook rice, saute onion & carrot and add mushrooms & cook for approx 5 mins
    Mix veg with cooked rice, breadcrumbs, chopped nuts, grated cheese and egg - grease loaf tin and cook for 45 mins at 180 degrees


    This is the recipe but i stir in 1 teaspoon of marmite into carrots, onion and mushrooms just before i add it to other stuff - i also add in a generous sprinkle of pine nuts and sesame seeds and sunflower seeds - if you like sundried tomatoes finely chop some and add too - when i am cooking i tend to cover with foil for first 25 mins or so and then take foil off for last wee while as it can sometimes turn out too crispy if left too cook without covering
    just thought i would add this recipe as i have tried various nut roasts and am not really impressed but this is delicious particularly with salad and new potatoes - kids love it too - enjoy
