    As I'm bigging up tofu, here are a couple of recipes.. not really xmas dinner material, but hope you like them anyway!

    Tofu & brocolli flan:

    Line a flan dish with shortcrust pastry and bake for 10 minutes.

    While the pastry is cooking, fry two onions in some olive oil until lightly browned. Add a handful of chopped brocolli and some tamari or soya sauce to flavour. Stir for a minute or so then transfer into a food processor with a block of tofu. Whizz together until smooth.

    Pour the processed mix into the part baked pastry base and top with slices of tomato. Bake in a moderate oven until the top is brown and the pastry is done. It will never "set" completely, but if you leave it to cool it will get firmer.

    Nice served hot with new potatoes and peas or cold with a leafy salad. tongue2.gif

    (You can substitue the brocolli for Spinach or other greens if you dont like brocolli).

    Grilled tofu:

    Cut a block of tofu into strips 1cm thick and dip into a saucer of soya sauce or tamari so it is coated both sides. Place under a hot grill and grill both sides until slightly crispy (dont over do it or it becomes rubbery!).

    This is nice in a sandwich with tomato sauce or salad or choped into chunks & mixed into a salad or a pasta or vegetable stir fry.


    For desert:

    Tofu & fresh fruit smoothie

    Blend half a carton of silken tofu / pack of normal tofu with your favourite fruit in a processor or with a hand blender and eat! biggrin.gif
    It is deliciously smooth & very healthy giving you protein from the tofu & all the goodness of the fruits.
    My favourites are mango witha handful of frozen mixed berries... mmm!

    If you want a smoothie with less calories use plain live yoghurt instead of the tofu. I use Sojasan soya yoghurt from a health food shop ... I also make my own live yoghurt too.

  • I have had butternut sqush cutlet like things which are very nice which have a sauce to go over as they can become rather dry and I've had nut roast aswell which I LOVE!!! Don't know what I will be having this year though as not sure if it will be my BFs parents or mine this year, hehe. Either way I'm having vegan christmas pud with dairy free custard and dairy free whipped cream and HM mince pies :j . Oh yes aswell as all the drink I want :p made easier if BFs parents as they'll do it in the pub again and it's open bar if anything like last year :beer:. Might give the nut roast recipie to BF's ma if going that way this year. Wouldn't chance it with my ma though as she'd most likely burn it :rolleyes: .

    Your tofu and brocolli flan sounds gorgeous. I must admit I'm not a great fan of tofu but I think it's because I've not given it a fair chance. I did try it scrambled with lots of spices in and it wasn't too bad. I also had a vegetable and tofu quiche at the Earth cafe in manchester and that was really tasty, so thank you, I am going to have a go at this.
