Banana and walnut loaf:
Serves 8, 172 cals per slice or 4 WW points
Spray oil
200g wholemeal flour (recipe doesn't stipulate plain or SR, I've used plain in the past, used white SR flour yesterday and it was much lighter in texture, the wholemeal makes it quite dense)
2 tsp cinnamon
20g chopped walnuts
2 eggs
3 tbsp maple syrup
3 overripe bananas, mashed
1. Preheat oven to 190c, fan 170c, gas mark 5.
2. Mist a loaf tin with cooking spray and line with baking paper (I used a cake tray instead yesterday)
3. Sift the flour and cinnamon into a large bowl and stir in the walnuts.
4. Whisk the eggs in a jug. Add the maple syrup and mashed bananas and whisk to combine.
5. Pour the wet ingredients into the flour mixture and gently fold together, taking care not to overwork.
6. Spoon the mixture into the tin and bake for 40 minutes until a skewer inserted into the centre comes out clean.I get knocked down but I get up again (Chumbawamba, Tubthumping)8 -

DGS is 5 today, that’s gone so fast!Have been to Mr T again this morning to pick up some bug spray, the lemon tree has whitefly. Served a double purpose as I’ve clocked up just over 7,000 steps. It was lovely and sunny first thing but has turned gloomy again now.
Using up a pouch of jackfruit curry that was a substitute in my Mr M order last year. Will have it with basmati rice for tonight’s dinner. Been putting off using it for about a year as I don’t really do ready meals. Thank goodness the ordeal of not being able to get a delivery slot, queuing to get inside supermarkets and bare shelves has gone. Don’t get me started on the loo roll and stock piling nightmare of last year, never want to witness that again.I get knocked down but I get up again (Chumbawamba, Tubthumping)7 -
Thanks for the recipe. I have a list of things to make today and tomorrow. That will be going on it 😊 It'll also be safe for my best friend who has a dairy allergy so double yay.
I couldn't queue up for supermarkets as I pass out if I stand up for 20 minutes or thereabouts so we survived on what was in the cupboards, freezer and what I could find in the local co-op for the first 10 weeks of the first lockdown. One of the times I've been grateful for my food hoarding tendencies.5 -

Partly as keeping just one type of flour saves on storage space and partly as if you don't use self-raising flour regularly then it will lose its raising power over time." Just add 2 teaspoons of baking powder for each 150g/6oz/1 cup plain flour.I'm not sure that is the whole truth though as I am sure I read a few years ago that she was in the US & didin't like what they put in their self raising flour.ETA found it. In the US self-rising flour also contains added salt - around 1/2 teaspoon per cup.

Thanks for that badmemory. I remember this tip coming up last year when we were short of flour. I tend to use more SR than plain but always have baking powder in stock so handy to know to use up the plain if it’s hanging on a bit.I get knocked down but I get up again (Chumbawamba, Tubthumping)5

Hi SA - just catching up - your wardrobe looks lovely. Another here who wasn't aware that Howdens made wardrobes! I bought mine from Spacesavers over twenty years ago when I first moved in. The doors are white but over the years have sort of morphed into more of a creamy colour! I can't be bothered to change them now as I'm thinking of moving.The vinyl looks good too. I had virtually the same on my kitchen floor before it was remodelled. Everyone who saw it thought it was real wood!
