Mmm carrot and coriander soup, great idea
Working lunch today, which will be a full meal so I'm going to do something very simple for me - pitta and salad maybe, and OH can finish off last night's paella, so no need to cook0 -
Yorkslass I planted the mint straight into the soil but I have a tiny, damp, north facing garden and nothing else I've ever planted has done very well. It's in a small bed, and I'm quite happy for it to take over. The flowers are pretty, and fresh mint on my doorstop is a real joy. Thank you though
Have just chopped and frozen two wrinkly peppers, they will be fine on pizza or in chicken n'rice. Have also made and frozen parsley sauce to use up the rest if a bunch of parsley. Don't know how it will work, so fingers crossed. No other leftovers to use, I have deliberately cut down the amount I cook recently, and it has made a real difference.0 -

I find mint tends to leave the pot and root out underneath anyway :rotfl:, but I do try and contain it a bit, my black peppermint is in a pot as it looks so pretty and the other mint is in a little bed bordered by the patio0 -
Hi all, can I ask a few questions about freezing stuff for soup pls?
1: I have a fridge full of veg that I shall never use in a month of Sundays. Can I chop it all up and freeze it in 2x portion sizes ready for soup without blanching it first?
2: Is there any veg that should be kept separate from the others.
3: Can I freeze lettuce to go into soup? or is this too stupid a question.
I don't have a lot of room in my freezer and don't really have the time to make tonnes of soup atm.

I usually make up stew packs when I freeze veg with a mix of whatever veg is to hand. No need to blanch.
I haven't ever frozen lettuce but I know some people freeze lettuce soup so might be worth making that to freeze. Don't think it can be frozen raw as it turns black.0 -
Tonight I'm trying to use up some odds and ends so I'm doing a kind of takeaway night. Using up the YS brioche burger buns with some burgers from the freezer and then I'm going to make some tortilla pizzas with the 2 tortilla wraps that have been in the cupboard for weeks. It will also get rid of a sad looking pepper and the YS mozzarella OH picked up the other day. Saw the recipe on the lidl Facebook page. Hope they turn out OK.0

I too would freeze the veg if you haven't time to turn into soup,although you can make a bit vat of the stuff in under an hour from start to finish. Helps if you have some soup freezer bags as once colld the soup can be tucked into odd spaces in the freezer for another day.Never made lettuce soup but I know a lot of folk do I don't think freezing unmade lettuce would work very well though.
Tonights meal is a big salad and I am going to have it with tinned tuna and sweetcorn as I have quite a few tins to use up.
I mash the tuna and sweetcorn together with a dollop of mayo and some sweet chilli sauce and half will do me for tonight and the other half tomorrow.Cheap and cheerful and no slaving over a hot stove for me:) I quite like having a couple of dinners like this when its hot .
I made some chocolate chip cookies for my DGS which went down very well after History club(well there are few left in the tin at least )
Might make some more of the cherry scones I had last week tomorrow as they were rather nice and I have some HM Damson jam that I had given to me.
I'm going to get my shopping on Sunday at lunchtime as I think the shops hopefully will be a bit empty with England playing football:):) should be qyuite peaceful at least

Usual Friday shopping today, market that was unusually quiet and Co-op (always quiet :rotfl: ). Not a lot spent but did manage to get a goodly haul of ys stuff - grapes, strawberries, carrots, fine green beans and x2 small pizzas. I'll cook some of the carrots with swede for carrot & swede mash for the freezer and we can have the beans on Sunday with new potatoes and slices of lamb in gravy from the freezer. The forecast for the coming week is hot, hot, hot
so the fruit and pizzas won't be hanging around for long!
I haven't done next week's meal plan yet but I'm thinking along the lines of salad, stir-fry, fish and the like so I can spend time outside instead of in the kitchen.
Now there's a bit of room in the freezer I've opened the pack of bacon offcuts that I bought last week (long dated) and have separated out and frozen into portions. Two large chunks that are more like mini joints (will cook in the SC), 4 "chops" and enough thinner pieces for a breakfast. Definitely good value for £1.29.:):)
I've half a carton of LL milk to use up and am dithering between a large custard tart or SC rice pudding (which I don't mind eating cold). I think the custard tart will win.

I'm going to blanch and freeze a lot of my YS carrots today - I might make some soup but I haven't got freezer room for too much soup as it would have to go in big solid tubs, but I could make enough for next week's lunches and a small pot to freeze.
It really was a big bag of carrots, taking up a lot of fridge room and needing using or freezing quite quickly!0 -
I'm not sure if it was in this thread that I talked about slicing and freezing bananas, but I tried the first ones today and frozen banana is lovely
!
I ate a piece straight from the freezer to try and that was very nice, and I added the rest to my chopped fruit and although it went a bit soft and gooey as it defrosted, it still tasted lovely.
I'll definitely do it again if i find myself with too many bananas!0
