take a pat on the back YorksLass, an excellent use of leftovers I sometimes roll croquettes once made in dried sage and onion stuffing mix instead of breadcrumbs to make them even more savoury, add a spoonful of curry powder for a bit of a zizz as well :) I definitely am a lover of spicy things

Using up what I can this coming week as I shall be off on my travels the following week to Bath for my freebie holiday :) I like to make sure the fridge is empty before I go if I can. I dug out a pastie from the freezer last night that I had forgotten about and it really was very tasty I have a feeling there are some more stuck at the back so I may have a rummage later on and have it for dinner tonight with a big salad

Next week I am out for dinner on Sunday,Tuesday and Wednesday so really only need to cook on Monday,Thursday, Friday and Saturday as I will be at DDs on the Sunday and away to Somerset on the Bank Holiday Monday so very little shopping required for me next week,I can find enough to eat from the freezer .

I am quite pleased to be using up the freezer stuff as I am determined to get it emptied at some point this year for a good defrosting :)

I am feeling very saintly today. I was passing Lidl just before it opened so I waited and nipped in as soon as we were let in. I managed to get one of the £1.50 waste not boxes, plus two freezable vegetable pizzas which could do two meals with a salad at 70p each. Then there were two different huge tubs of salad at 20p each, which I knew I could use.

The £1.50 waste not box contained the following:

2 avocados made into 3 portions guacamole and frozen
    3 carrots
    8 onions
    2 portions strawberries
    13 good crisp apples
    2 packs basil
tray of small vine tomatoes (26)
    3 large tomatoes
    3 lemons
    5 small snack cucumbers

With the salad boxes I took out all the sliced peppers and the small tomatoes and froze them separately for ratatouille another time. I then liquidised the remaining salad leaves, carrots etc. with a couple of the apples, some frozen watermelon I already had and one of the packs of basil. It has made enough for four delicious smoothies, some of which have been frozen for later use. I still have plenty of fruit and veg left for the week and am delighted with my total spend of £3.30 today. These bargains are absolutely great if you can use them immediately but I suspect a lot are bought and wasted.

Looks like you need to be there at opening time to get these £1.50 boxes. Will have to try to get to my nearest one some time and see if I can be so lucky!

Certainly never seen them when I usually go.

To make croquettes, cook and mash the potatoes as normal but don't add any butter or milk as the mixture needs to be quite stiff. If the mash is a bit on the soft side (depends on type of spud used) add some flour. You could add some herbs at this stage (eg chives). Chill in the fridge. Once chilled, form into roll shapes (wet hands help here), dip in flour, then beaten egg and finally breadcrumbs. You can open-freeze at this stage if they're not needed straight away and then bag up. Otherwise just keep refrigerated until needed. Best oven baked or in an air fryer. Easy-peasy and much cheaper than shop-bought. :)

Thanks for this Yorkslass :T On my list to attempt !!:)

I do like a bit of spice too JackieO - another great idea utilising sage n onion stuffing !

I've never made them before so looking forward to trying them at some stage x
  • Living Proof - how amazing have you done!

I didn't know there was such a thing... I would never have thought to utilise a salad bowl like that... i see them and think I'll never eat it and never thought to dissect it and freeze ingredients for ratatouille!

I just love this site for the inspiration :j

I haven't achieved as much as I would like this weekend as I was quite tired Friday and had no energy whatsoever so had an early night. I did really want to go shopping after work so that my weekend was free... but hey ho - it never happened.

Saturday I was out shopping with DD1 and I was her bag lady - I honestly never went out with my purse so that I resisted the temptation of spending. It was hard believe me!!

So food shopping today and I did manage to make savings - I mostly stuck to my shopping list and the essentials...also got yellow sticker diced pork for the freezer and some half price items for lunch (noodle pots reduced to 50p) - for emergencies at work.

I used up the frozen veg and put with a reduced gammon joint and potatoes for today's dinner - no leftovers.

I had a right go at DH as he threw the brown bananas out as he was tidying the kitchen ..

I hope next weekend to achieve more xx

They're not difficult to make at all. You just have to logically follow the steps.

I don't even bother with the breadcrumbs! I just wrap the hard boiled eggs in the sausage meat and bake in the oven. I use 2 destined sausages per large egg.

I can't usually be bothered with the egging and bread crumbing - it's too messy and time consuming. However if I was making them for a buffet for example then I would crumb them.
