I use that peach and chickpea curry recipe loads as it's simple and the 6 year old likes it too. You're right, I think it's better with a bit of other veg added. We also eat Jack's Not A Tagine from the same site which is delicious! I add a tin of chickpeas to that and then it's a really hearty meal.0

Well it's baltic here this morning, however another frozen smoothie it was for breakfast. I am still shivering
I set myself a budget for the month for all food, household and toiletries etc and am trying not to buy anything else until payday next Friday. I am actually under my budget by about £9 but it gets carried forward to use next month. Therefore no porridge until next week. I am away to London for work next week Monday-Thursday though which will certainly help as will get fed and watered for free
Lunch today is a portion of chilli out the freezer with some rice. Tonight's supper may just be an omelette. Again!0 -
Tonight's supper will be a cheese omelette. I've still got eggs to use up from NYE when I bought some for my friend's breakfast as they were staying over. They're near the UBD so guess I need to use them.
Snacks in between: shortbread from Christmas and some crispbreads with cheese and pickle.
This is per ramekin so just multiply up:
1 seperated egg
100ml milk
10g butter plus greasing
10g flour
30g grated cheese of leftover choice
salt/pepper to taste
Put oven on at 200 (mines fan) and boil kettle. Use butter, flour, milk to make a basic white sauce add the cheese and when that's melted in add the yolk and turn off the heat so it cools slightly. in the mean time whisk egg whites till 'foamy'. mix a little white into the sauce to loosen then gently fold in the rest. Spoon into buttered ramekins and cook in the oven in a hot water bath for about 12 min. Lush!
As to the salad...I have changed my habits, I know buying pre made salad may sound naughty but in terms of waste I found as the only one eating it, too much was getting thrown away (and yes I know you can make soup but I don't always have space in my tiny freezer and I don't like tomato pepper lettuce soup all that much). my local ASDA does a big bowl with all-sorts for £1 that I like and it's 3-4 meals depending on any extras and nothing is getting thrown away...Am I naughty or nice?0 -
Marns sounds sensible I buy lettuce ,tomatoes, cucumber regularly but I am happy to eat some sort of salad with every meal.I don't buy or eat bread and at lunchtime today for a change I had a wrap from the freezer which I defrosted filled with shredded lettuce sliced tomato and cucumber grated cheese, grated carrot,diced beetroot and a dollop of cream cheese and it was delicious and very filling ,tonight I have a sweet chilli thigh portion from the freezer with steamed sweetheart cabbage ,carrots and mashed potato, mainly to use up some of the mash from the freezer ,but I would be just as happy to have another salad with it. I am out to my eldest DDs for dinner tomorrow night so no cooking for me and I am at my youngest DDs on Sunday for dinner so again no cooking. I shall go food shopping next Monday for my second shop of the month
I have to take my DGS Jack to aldi's later today as he is off back to Uni tomorrow so we will stock up on necessary things for him ,but that will be paid for via my Happy Cash Stash as I haven't used it since before Christmas so there is around £25.in thereit will save him a few pounds as he is the typical penniless student. I have also made him a stash of cake and cookies to take back with him

Made our own style fahijtas. Hubby had ys green Thai ones and I had ys chicken cooked in my own homemade bbq sauce, that I made in the summer. The wraps were ys and cost 5p for 8 wraps, The onions were wonky onions and the red pepper came from the freezer (bought when on offer).2025 Fashion on a ration 0/66 coupons

Made a lasagna using leftover pasta sauce from yesterday and the homemade bbq sauce. Also used up mushrooms, carrot piece and lasagna sheets.
Used up fresh blueberries from the market stall. Back to homegrown frozen blueberries tomorrow.2025 Fashion on a ration 0/66 coupons

We usually do meat free monday but our main carnivore, DS, has gone back to uni leaving a half eaten pack of cooked chicken and a half eaten pack of bacon. So i've had the chicken as a snack and OH and I will have bacon and egg for tea - i'd rather use up than throw and the stuff was unlikely to be eaten any other time. OH is away for a couple of days and then I am. we also have a plethora of eggs for some reason.
I will do meat free Tuesday and Wednesday - and probably beyond..I wanna be in the room where it happens0 -
Banana fruit cake currently in the oven. Good way to use up left over bananas and dried fruit. ☺️0
