    This is what I'm what wondering currently - ie what to marinade mushrooms/owt else in.

    I shall have to google - but, off the top of my head, I'm guessing at things like balsamic vinegar and soya sauce for instance.

    I've just had a stirfry for dinner - which had marinated tofu in (but it came ready-marinated). Other ingredients were peas, French sorrel from my garden, portobello mushroom, tomatoes, some leftover cooked brown rice, grated carrot. Duly sauted in a little dissolved vegetable stock, little soya sauce added and some dried mushroom powder (nods to Caron:)).

    It was quite tasty. Just under half of it left - so I guess that will be tomorrow's main meal with a bit of "free food" to bulk it back up again - maybe canned potatoes with it?

    Though I do know there will be wine when I'm out socialising tomorrow evening - so, again, a bit of a DOD - but will try and restrict myself to one small glass of it.

    I've got some peppers in the fridge anyway - so was rather thinking of using them for stuffed peppers. I don't have a microwave - but I do have a Slimming World recipe for that - so don't think that mentions a microwave. Got an aubergine in the fridge too - and I think that will be a SW version of imam biyaldi with couscous (thinks must look out for a pomegranite - so I could chuck some pomegranite seeds on it for colour).

    Got an avocado in the fridge too - the one vegetable?/fruit? that doesnt count as "free food" - so I guess I'd better peel that and put it in the freezer for the time being.

    Thinks - maybe a cauliflower as part of the next bit of shopping. Could do cauliflower rice. I like roast cauliflower. In fact my favourite bit of cauliflower to roast is the leaves - does wish they wouldnt chop off the majority of the leaves before selling them...

    Today I've had two bits of toast (~breakfast) and, for my main meal, I had some leftover mash, so made cheesy mash and beans :)

    Nearly out of cheese. Really annoyed at myself as I meant to get some cheapo cheese at "L" Weekend Offers 3-4 days ago .. remembered at one point, but then forgot again. Oh well.

    Good suggestions Brambling I can testify that the HB method of using leeks works really well instead of lasagne sheets. :)


    flubberyzing CFO is definitely "rinse and repeat" land foodwise though a decent amount of freezer space does help stretch the time between repeats!


    I was feeling a bit meh after my Drs visit this morning as basically the increase in meds is the end of the line treatment wise :(. Still never one to allow myself to dwell I took out some of my angst in chopping back tomatoes in the greenhouse and beginning to empty the garden wall baskets - very therapeutic and feel much better now:D.
    I got a "freebie" with my groceries, I was the last run in that van and in my basket was a baq of frozen potato croquettes I hadn't ordered. Driver asked if I would keep them as he can't and because it's a frozen product they would get binned when he got back. I was happy to oblige;).

    Lunch was crispbreads with the last of the Jarlsberg cheese and sliced cucumber, followed by cherries and a flat peach. Tonight will feature green & french beans and the croquettes are calling but not sure what else to have. I've had baked beans the past two days and although they go well with croquettes I don't want to open another tin as then I'll have more to use up! I'll have rake in the freezer and see what I come up with that I can cook from frozen possibly breaded haddock or similiar. I might roast the beans with some cherry toms :). I've lots of ripe tomatoes needing "something" done with them so while the oven is on I'll get them roasted. My Dad is coming for lunch for lunch on Thursday and I was thinking HM tomato soup though I usually use tinned toms for that so may still do and freeze the homegrown ones to use in other things over the winter.

    I ended yesterday with a late evening curried coleslaw & Lincolnshire sausage sandwich :)

    "Strange combination", but it was what I had to hand, so why not :)
  • Caron - sorry to hear that things seem to be getting worse with your health. Have you tried looking into alternative remedies? What exactly is the name of the ailment concerned - just in case any of us have any ideas on this? (NB: Kittie still hasnt posted on MSE yet since the day the PPR was lifted - but she might be reading along and just "not signing in" and she might have some ideas).

    Yesterday's ????? meals finally became a ham & mustard sandwich mid afternoon, with a fried egg sandwich in the evening. Plus much later a small bowl of my apple & blackberry crumble with some LO tinned custard, a varied if not healthy diet

    Up early this morning, I'd set the timer on the washer and it woke me as it started, that bit was not to plan. It was still dark

    Dull day, but dry & warm, washing now pegged out
    Found one semi chewed large frog on the grass:(
    Plus loads of huge slugs dying from me poisoning them:)

    Breakfast of porridge, banana, HM yoghurt & honey, must be getting cooler because the honey is starting to thicken & not it's normal runny state. No need to nuke honey yet awhile, I do that in winter

    Into town once the worker bees traffic clears a bit, not that there are big traffic problems here but may as well spend a few minutes in comfort at home instead of sniffing exhaust pipes

    I'm hoping Wilko has at last reduced the garden stuff, I did read that it varies store to store once they can't sell at full price. No idea where the trigger point is. Must be too rich round here and still buying

    Good morning everyone,

    MTSTM - thanks for the offer but tbh I'm wary of putting too much detail online. Suffice to say I have explored every mainstream & alternative options and unfortunately it is what it is. My main challenge which I am managing so far is maintaining my mental well being which allows me to make the best of what I have. Life's too short to fret about the "What ifs" in my book, I just get a bit frustrated at points:).


    It's absolutely tipping it down here this morning so unless it dries up I shan't be straying far. I do need to run an errand at some point so hopefully there will be a gap in the showers if not I'm going to get soaked.:(


    My Dad is coming for lunch tomorrow and I've promised him HM tomato soup so will get that made today. I haven't quite decided what I'm having today yet. I didn't meal plan for this week on the grounds I had various bits to use up & wasn't sure what would be ready in the garden but I'm kind of wishing I had now, not too late I suppose though it hardly seems worth it as my son is home this weekend so it would only be for a couple of days.

    Back from t'shops, a good trip out today

    Iceland have fresh rump steak on offer, £2, I've been fancying steak for a while now, so I've got the max of 2 per customer in the fridge, long dated, plus bag of frozen chips to replenish my stock.

    Really pushed the boat out in W/rose, they have Mr Organic tom ketchup on offer. Thought I'd give it a try. I could use my own toms to make ketchup, but really CBA

    Lunch was ham & salad sandwich, followed by one of my figs

    I found YS cheese & onion 2 pasty pack in Iceland, 59p, so one of them with more salad will be dinner, may make a few chips to sit alongside pasty, bit carb heavy but what the heck?

    Plus the LO crumble & LO custard should I get peckish

    The day never brightened up, I suspect my washing will still be like damp rags when I eventually bring it in

    Not sure if it was my internet or the site which gave me problems last night, I wrote a post a couple of times hit submit and it disappeared into the ether, you weren't missing much :rotfl:

    Sorry things aren't to good at the moment Caronc sometimes all you can do is try and not let life grind you down :smiley:

    My friend on Sunday cooked a kilo of new potatoes for two of us :eek: and was then going to throw the LOs away :eek: which means I have been eating them all week :rotfl: I've eaten potato salad with my lunches and last night I chopped some up and turned them in to very nice chips in my air fryer I didn't add any oil so I wasn't sure if it would work but they were really crispy :grin: and went nicely with my roast chicken leg (found in the freezer) and roasted chicory and fennel.

    Lunch today was smoke salmon salad with last of the potatoes and LO fennel and chicory, no CFO tonight it's my nephews birthday and he's coming home to allow his mother to cook for him :rotfl: he requested a roast leaving the choice of what meat to my sister I hoping for lamb but won't complain what ever it is will be nice

    I started early, titfering about in the garden with bark and slate chips... just before 10 I remembered it's a Wednesday and there's a car boot on 10 miles East of me.... I went last week and, although it was a bit of a poor show, it did give me "just what I was looking for (almost)". So it was worth a dash.

    I've arrived home with a picture for the wall, 5 vases ... and a Pasty. So lunch today is pasty, mash and beans.
