    A few things have thrown me off track. DS1 getting in to trouble at school and being cheeky at home. Not looking after his belongings either. DS2 finding a few things hard and being teary. Me having a bit of PMT and feeling frustrated with being on the taxi-ing treadmill and not really getting to do the things I wanted us all to do. Awful weather! Emotional eating. Things to get done at work.

    BUT these are not insurmountable problems! DS warned to behave and better sanctions and rewards introduced at home. Patience with DS2 he won't be teary forever and is getting better. PMT will go. Make life how we want it - don't whine about it - do something! Use the awful weather to get ahead with inside things. Have a day of light eating. Have a super productive day at work.

    Off to get back on the right track!

    In money news, my induction to my new online teaching job was great - they seem so relaxed. I estimate about £50 per week in from this for 2 weeks but I am hoping for more after this. I have my 3 weeks of homestay students confirmed in the summer, and my summer lunch club hours should be confirmed by the end of the week. All of this is to earn £5000 extra this summer to be able to travel with next year.

    To make this not impact on the family life I'm planning as much as I can ahead. This year I'm even going to cook the meals ahead of time so need to research freezer meals.

    Thinking of things like:

    Lasagna
    spag bol
    chilli
    marinades for chicken that can be thrown in oven
    slowcooker dump bags
    Shepards pie
    fish pie

    ANy other suggestions?

  • Chow mein. Prepare sauce, chicken and veg, then on the day just cook noodles and mix in.

    Noodles cook quicker than pasta. for reasons totally unknown to me.

    Thanks northern monkey. I'm really not good at chow mein but maybe its time to start!

    I need 21 meals, can't be too repetitive or too far from a normal british menu.

    Quiches freeze well, (pastry and pastryless) I make up 2 at a time, one cut up for quick teas with salad/new potatoes or a jacket spud. The other gets frozen whole and can then be reheated when required. Smaller cupcake size ones are great too.

    Yes! I usually put it in a freezer bag and squash as flat as possible for the size of bag, that way it cooks faster & also doesn't take up loads of room in the freezer.

    I freeze mash in a Pyrex dish that can go straight in the oven from the freezer, give it a stir after 20 mins to make sure it's defrosted through and then leave it to brown off on top. Sausages go in the oven at the same time so nice and easy.

    Sorry to hear you had a bit of a rough day yesterday Earthie, but great positive reframing of it all!

    Preparing the meals in advance definitely sounds like a great idea, but afraid I have no particular pearls of wisdom to add!

    £5000 is not only a great sum to make, but will certainly ensure you have some great travels to remember - how wonderful for your boys - they won't know how lucky they are now, but I'm sure they'll look back on it when they are older and truly appreciate how hard you worked to get into a position where such adventures are possible.

    Thanks everyone!

    Feeling much more positive and like life is for living, not being down in the dumps when what I really have is an amazing opportunity to be happy :).

    I got my lunch club hours in and I'm only in for 2 weeks - thought I'd get 3 - so slightly down there. This does give us a week at the end of the holidays where we can go camping so it's a positive really. We will try to go to Skye and the hebredies.

    I have had a look at the Supermarket at the scottish/ british favourites, and I can do things like haggis, scotch pie and mac n cheese. Not particularly healthy but I'll serve with veg/salad and a fruit based dessert.
