slow cooker chicken and bacon casserole with potato cobbler.
The chicken is left over from yesterday and ll add some bacon off cuts lv got in the freezer. Plus l celery, stick, few mushroom, few tomatoes frozen from summer harvest and a few carrots.....all added to bulk it out. Then all l have to do is make the mash potato cobbler topping.
plus a very easy rhubarb and strawberry shortcake in my other slow cooker , as l found a small bag of each in the freezer ,left over from summer harvest, which needs to be used up.1 -

dinner for us on Saturdays is very light. aswe dont like to cook on a saturday. In summer we have quiche ( made day before) and salads but in autumn /winter its usually micro bake potatoes with cheese or ratalouillie or 2 boiled eggs each with lots of hot buttered toast with hm cake, made day before to follow.
We always have large ham and salad baguette for Saturday lunch after hubby gets back from morning market shop. So we never feel like eating much on the evening.2 -
@kerri_gt hope your feeling better today.
We had an amazing lunch, scallops to start, sirloin steak and broccoli for main all cooked over fire.

Hello all, I've been so busy for the last few days I haven't had a chance to sit down with my laptop. Sorry to hear you're still suffering @kerri_gt, get well soon.
I made an omelette from some leftover mushroom stalks, an onion, a garlic clove, some spinach and two eggs which I ate with cheese on toast for dinner and washed it down with a coffee.2 -
Tea tonight will be 'Viking Chicken' in slow cooker, put on low at 10am hopefully ready for 5.30pm. Not made this recipe before. Says a whole chicken (im using portions) with lemon and rosemary inside, then put chicken top of a layer of, apple, onion, carrots, sprouts, mushroom and potato's , dotted with butter and olive oil. l found some slices of lemon in freezer that needs using up so ll put those on top of the portions with rosemary from the garden. Pud l think will be microwave treacle sponge made in small pyrex dish ,as it only takes 5 min to make and cook. with packet instant custard.3
