OH was at work this weekend, so boring 'chuck in the oven' stuff for myself. He's over tonight so I'll be doing the household staple of fajitas. We're trying corn wraps this week - we used to use white, after I was diagnosed diabetic we switched to wholemeal but found them disappointing. Hopefully these will hit the spot!
I'm also going to cook extra veg and plain meat, to pair with some noodles and a packet sauce for his lunch tomorrow.
Is it worth making black bean sauce from scratch, and more importantly, can you freeze it either home made or from a jar? He only eats it once or twice a week, which deters me from buying a big jar as it'll go off, but the little packets are about 40p each which isn't too money saving!0 -
Split pea soup with Polish sausage - we are experimenting with different soup sausages from the Polish shop which opened here recently. It was opened by one of our new allotmenteers and I have learnt so much from her about Polish food0

Nearly froze putting up a garden shed so an emergency tea of pasta, tuna and a jar of Lidl tomato sauce!0

Husband had a hangover today so didn't bother putting in much effort on the Sunday roast, I cooked a chicken, pimped up some stuffing with bacon lardons and red onion. Roasted some potatoes and a few roast veg, carrots, shallots, parsnips and courgette. It all did it's thing in the oven whilst the football was on.
I did make myself a nut roast, I had some vogel bread left from last week so made this into breadcrumbs, added, grated cheese, whizzed up some nuts, spring onions and sundried tomatoes, mixed in some beaten eggs and baked it in a roasting tin. It made ten portions, I had one with my dinner, I will have one tomorrow lunchtime with salad and froze the rest.
:eek::eek::eek:that counts as 'not much effort'
Yesrtday we went over to friends for lunch, full roast and crumble for pud, was yummy.
Today OH had tomato soup and crusty bread and I had a roast chicken breast with broccoli, cauliflower and gravy.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

JILI don't eat prawns but MrC has been less than impressed with them recently.
Homemade salmon fish cakes with broccoli and carrots tonight. Low fat yogurt with stewed apples and sultanas for dessert.0 -

Just had home made sweetcorn soup with a scotch egg for lunch and supper tonight will be pasties from the farm shop HWK likes the traditional Cornish ones and I like the spinach and ricotta ones so that's what we have with some baked beans for an easy meal.0

Feeling a bit under the weather (again
) so just had a jacket spud with cheese and beans with a nice big dollop of butter to keep my arteries warm
Stollen and a cuppa now.

HM Courgette, Celery, Cabbage and Potato Soup (nice and 'white peppery') for us this evening - with Crusty Bread for OH and GF Oatcakes for me. Roast Pork and Pickle Sandwiches will follow whenever we feel hungry a bit later.
I've got a pan of Minced Beef Bolognese simmering away nicely on the hob - just about ready to stir some Gluten Free Gravy Granules into it. It'll be portioned up to go into the fridge to chill overnight and then go into the HM Ready Meal freezer stocks.
After that, I'll be cooking up some Minced Beef Chilli with diced peppers, mushrooms and Kidney Beans - all helps to s-t-r-e-t-c-h it a bit further :j! That will also get portioned/chilled and then frozen for HM Ready Meals :T.0
