    Cod loins in a home made creamy parsley sauce for us tonight.

    After a very indulgent holiday where I did not give a second thought to splashing out on lovely lunches, endless coffee stops, cream teas and fabulous dinners .... it is rather nice, in an odd sort of way, to be back in the usual regime of menu planning, stretching meals and working out how not to waste a single penny. Holidays are wonderful (and heaven knows, we needed the break) but it feels equally good - if not more so - to be back in control again :)

    We had salad again, this time it was chicken, and I cooked some bacon lardons as they were about to go out of date. I had feta and tomatoes with mine.

    We had burgers last night from the bbq the village were selling when we arrived there with the horses… well I did as unfortunately my dog stole most of my friends burger, mortified!

    Something simple for lunch and dinner today. chicken kiev and salad tonight.

    :rotfl::rotfl: always hold onto your grub when there is a hound about. I bet he / she looked very cute while doing it too. I hope your friend managed to get another burger.

    Not sure about tonight - I think i have something with clams in the freezer and might have some of that with pasta. It's like the seafood medley thing that Islandmaid tried from Iceland either last year, or the year before. They don't seem to do it anymore (I tried it too based on IM post) - now all the ones they have contain squid...not my fav.

    Stuffed peppers for us tonight - I managed to find a bag of mixed peppers in Aldi yesterday which contained six huge red ones, so I will be roasting these filled with a mixture of (YS) minced lamb, onion, mushroom, rice, herbs and maybe some cheese on the top. Two for supper tonight, and four for the freezer.

    Pudding will be a hm Black Forest gateau. It must be 1979 again. :)
  • Much cooler here this morning so I'm doing some cooking ahead before it warms up.

    I'm roasting some more chicken thighs stuffed with sausage and wrapped in bacon, the last of the low fat sausages also wrapped in bacon and I'm making a sweet potato and bulghur wheat kibbeh bake stuffed with grated mozzarella cheese. I've also made some 'mock hollandaise' sauce using light mayo to go on an eggs benedict with wilted spinach for our lunches today. Using all the shelves in the oven always seems sensible!
  • Stir fry tonight, use up some of my noodles. I've got Chinese leaves and I'll chop carrots and mushrooms and some of my courgettes (which are taking over!), and a bit of chicken for OH
