am sure I have read somewhere that someone does make dairy-free yoghurt like that.. but I can't find the info. Worth a try I reckon :)

I drained a tin of fruit this morning for our yoghurt and am left with the "light syrup" - what can I do with it? Can't bring myself to throw it out - I have paid for that!

I need an answer for that too....poached reduced price pears just before Christmas.... 4 bags at 40p each. Poached one lot with aging (not aged!) port and one lot with lemon ( old lemon liqueur found in cellar!) and vanilla. We had them with ice cream/cream, made the rest into pear tart for new years eve, even glazing with apricot glaze (got post christmas for 30p in Booths).

PS. thanks for reminding me someone here that I should be using my Yogurt maker. Got it going this morning. Was without a kitchen from May til end November and I've really forgotten about all the things I did before.

What I'm getting to is that this morning I chiselled off the corner of an unidentified box in the freezer.... it's the left over syrup. What shall I do with it, other than waiting for next lot of cheap pears!

I'm not sure how this will help you molly.

I used to work as cook in a boarding school, we were very much (at least the HM wife was very much old style and before Jamie hit the scene. I have a recipe we used to do.....you might need to scale it down LOL! Her idea of thrift would leave most of you lot in the shade :rotfl: LOL she sometimes took it a little too far.

This recipe was taken from a 'schools' cookbook, published as a fundraiser by a group of schools

    1 A10 size pineapple pieces
    10 medium sized onions
    15oz marg
    10oz cornflour
    1/4 gallon mango chutney
    16oz tomato puree
    5oz sugar
    1 pt vinegar
    15 pints water
12lb cooked sausages (this doesn't sound much to me! It says to feed 120, maybe these were small children!)

Melt marg and cod chopped onions without browning for 3 minutes. Stir in moistened cornflour, pineapple syrup, chutney, tomato puree, sugar vinegar and water. Bring to the boil, stir well and add pineapple and cooked sausages cut into pieces (ahhhhhh that's how she did it!!!:T ). Bring back to the boil and simmer for a further 5 mins.

There are 2 great cheap pudds that we used to do in this book, but recipes state for 100!

Sand in the Red sea, which is more or less a crumble mix, baked on a tray in the oven for 10 mins, cooled and crumbled. Served with jam sauce (cheap jam and cornflour/water)

    Birdseed and custard
Melted marg added to dry ingredients oats, cocoa, demerara sugar, rice crispies/puffed wheat/cornflakes or a mix. ALso for 100, maybe I can scale it down if anyone is interested

Yes please! I would love any of these recipes you care to share - sounds really OS! Particularly like the sound of the birdseed :D

Edited to say, I'm quite happy to scale down, I used to use a few recipes from the army catering manual, now lost unforunately
... don't throw the string away. You always need string! :D
