Don't know if anyone has posted this before...
Makes about 5lbs
3lb soft fruit (eg:raspberries/blackberries etc.)
3lb caster sugar (I have done this with granulated, "whizzed" a bit in a blender.)
Put fruit in a very large plastic bowl, I use a big plastic mixing bowl and cook uncovered, stirring once or twice, until just soft.
Warm sugar in anther bowl for about three mins, then stir well into hot fruit, until sugar dissolves.
Cook for 10 mins stirring occasionally until setting point is reached.
remove any scum, then cool & pot.
I use the old cold saucer test for the setting point, but use a sugar thermometer if you have one.
Microwaves are more powerful than when this recipe was produced, these timings relate to a 650W model, adjust accordingly.
If anyone wants micro recipes for lemon curd or marmalade, let me know.

Microwave Marmalade - Makes about 2 & 1/2 lbs
2 Lemons
2lb Seville oranges
1 & 1/2 pints boiling water
2lb sugar
Warm lemons in the micro for a minute. (You get the most juice this way.) Squeeze into a large bowl. Shred the rind of the oranges, removing the pith before shredding.
Blitz the oranges in a food processor (don't worry about pips) until chopped and add to your lemon juice with the boiling water. Cover and cook for 14mins. Tip into a sieve and press out all the juice. (Give it a good grind around with the back of a wooden spoon.)
Pop your juice back into the bowl with the shredded rind, you don't need what's in the sieve. Add the sugar and stir until it dissolves, cook uncovered until setting point is reached.
Skim and pot after it's cooled for about 15 mins.0 -
Makes about 2lb
Grated rind & juice (microwave to get most juice see marmalade recipe) of 4 lemons
4oz diced butter
1lb caster sugar
4 beaten eggs
Mix together lemon rind & juice, butter & sugar in a large bowl and cook for about 4 mins or until the butter melts. Stir well to combine.
Stir in the beaten eggs.
Cook for about 5 mins, whisking every minute until it's thick and creamy. It helps if you have made this the conventional way before, as then you know what you are aiming for, consistency wise. (I admit to paranoia during this last stage, so lurk by the micro with your whisk in hand!! When trying in a new micro, I also reduced power to 75%.)

Johanne - do you know anything about "beavers"? Am trying to get ds1 on the waiting list at least for 2 groups round here and having mega trouble just getting hold of someone! Do you know if the age to start is 5 or 6?
Update on onion marmalade.... it's been in the fridge overnight and it now thick syrupy marmalade - no excess liquid - so simmer for as long as you can!
lil-me - good luck with your challenge! Why not post what you use each day etc from your "stores" and state whether you buy anything - a lot easier to stick to something if you know someone else is reading it!!

How disappointing about the jam, was the fruit dry and sound? I've had raspberry jam go off because I used less than perfect fruit. (Or so I was told by a friend's grandmum.)0 -

I plan to do a 'reasonable' shop at christmas..I've starved them all for long enough :rotfl: and replace a few of my stores that are becoming worryingly low now (well I still have more than a dozen breadflours but thats too low for comfort..):whistle: It currently stands at £183...although its not coming til the 21st so theres more than enough time for pruning..and TBH I did do it while I was starving (ooh and OH says he's sure I got the snowman one from Asda!!)The large one that is..not sure where I got the large tree one from but the small/individual ones came over from the states via Ebay0
