That looks yum JTS. Could I trouble you for your recipe p!ease? Not tried chia seeds before but found some in T yesterday £5.29 :eek:reduced to 87p.:D

    Good evening Elite.
Hoping everyone is warm, happy and well. Hugs to those not so.

    Thank you Pacifica :A

    Crikey that's a good bargain for the chia seeds :T I'm paying about £2 for 200g :o

I used to regularly visit a "Cranks" restaurant, and found their Banana Loaf Cake so scrummy, so yummy, I just had to buy the recipe :)

Sadly the Cranks restaurants are no more :(

    The Recipe:

    Butter 5oz
Self-raising wholemeal flour 10oz (I sometimes use white and whole grain mixed self-raising flour - as I did today)
    Brown sugar 5oz
    Sultanas 2oz
Walnuts, chopped 1oz (I omit these as not all family like them)
    Bananas (peeled weight) mashed 1lb
    Free-range eggs 2

Rub butter into the flour until the mixture resembles fine breadcrumbs.
Add da brown sugar - ooh! how come you taste so good.
Add the sultanas and chopped walnuts.

In another bowl, mash up dem bananas - Day, me say day, me say day, me say day, me say day, me say day o
And break those eggs into the mashed banana and whisk them until they are very thick and creamy.

Then carefully fold in the dry ingredients.

Transfer to an oiled and base-lined 2lb loaf tin and bake at 180 C ( I use 160 for a fan oven) Gas mark 4 for about 1hour 15 minutes to 1 hour 30 minutes until risen and firm to the touch.

Chia seeds swell up and soak up a remarkable amount.of liquid. I didn't want this to impact on the moisture content of the finished banana loaf - so I let a couple of tablespoons of chia seeds soak for a few hours in some milk, then add to mashed bananas to further soak for 30 minutes or so before using in recipe.

It can pay to wait.....deferred gratification and all that:D

I first saw these 2 years ago in one of those expensive boutique type kitchen shops for about £100. I'm sure I posted a photo here about them. Sourced some on the internet for about £90 but even that was too much.

Earlier this year I spotted them in another shop for £75. I went in to buy them but was told that they were the last ones in the shop and a lady had just been in and put down a deposit down on them:o

Anyway on Saturday I was mooching and found them again in the first shop for £50 so snapped them up.

Now I just need to find the right place to put them.

If you find them cheaper please don't tell me:rotfl:
