Car dealership not been honest over deliver times

That’s new cars. Can’t say I’ve ever had an exact date from a dealer. Most likely that the change in spec meant they had to cancel and re-order.0

This sounds plausible. I believe there's usually a 2 week period before the order is "firmed" by the factory precisely to allow for change of spec/mind etc but it sounds like rather than change the original order the salesman may have found it easier to bin it and start a new one.That’s new cars.
