You aren't wrong.

Well, to me, it doesn't matter if you are right or wrong. I paid with my card - and I have a receipt that clearly states total goods: £17 something, cash back: £2.00 which doesn't change the fact that I didn't request/receive the cash back from my account. Not all terminals have contactless, and to be honest, I couldnt tell you what shops in the last week I've made contactless or chip and pin payments in. But, I can tell you, I don't get cash back for 2 effing quid, ever. Perhaps I'm completely blase to the in store payment options. So, thanks for the opportunity for me to clarify; I paid with my card, using chip and pin (:T), and I still don't have the money that was put through as cash back on my transaction.0

I think that's an American issue only, for UK they're would be no net impact on the company. The only way they would receive a deduction is if they were showing the original payment as income and being taxed on it (so net zero still).
Shame that there has been theft from you, although one point to check are you sure it's not for something else e.g. an item they couldn't put easily through the till such as an add on to a meal?0
