Very little by CFO happening today as LOs for lunch and pre-made BBQ ribs with some veg bunged in the oven with them for dinner tonight.
As the weather would seem to be on the turn I've bought a couple of smallish beef short ribs to slow cook over the weekend. They are the rougher ones generally labelled "boiling beef" here but if you trim and render the fat before slow cooking and let it cool over night make a really tasty meal so I'm looking forward to that on either Sunday or Monday with either horseradish or garlic mash.:)0 -
Dinner today was one of those "well I ate it" tryouts in the event.
I decided to try out baked sweet potato with a sauce drizzled over the top that turned out to be a version of tahini sauce. Accompanied by spicy beans baked at the same time - that might have turned out better if they'd been the chickpeas I meant them to be. However, I accidentally used a can of cannelini beans I had nearby instead - so decided not to waste them and used them instead. Accompanied by some tomatoes/parsley left "marinating" in lemon juice. Bit of a dollop of "hot" sauce on the side.
It was "hmmm...." - not to be repeated. Except that - in true singles fashion - I've got a second helping of it to eat tomorrow:(
Oh well - the half of a large juicy mango I had afterwards was nice.0 -
Afternoon all
was quite warm and sunny when I left work this morning but it's dark, rainy and miserable now..
I had my Sainsbury's delivery today, used £40 worth of vouchers so I've got a months worth of food, more even, for about £30!!!
I've been cooking all afternoon, so far I've made:
Veg risotto
Cottage pie with carrot and swede mash
Chicken thighs/broccoli
I plan to make a bolognaise type sauce with mince, onion, pasatta etc that I'll have with either pasta, brown rice or mash.. or homemade potato wedges! I guess like a chilli then? But with no chilli powder in! :eek: I've got tortilla wraps too so I'll chop up a red pepper and make a mince wrap (doesn't sound that appetising! :rotfl: )
I'm also going to make corned beef hash, some kind of bacon and spinach pasta and I've got some frozen tropical fruit and blueberries in the freezer that I need to get rid of so I might blitz them up with some cream and jelly and make a jelly dessert type thing..
Or I might do a crumble if I've got all the ingredients for one, I haven't made one in years. Will have to google how to make one!
Think I'll have a glass *ahem* of red wine and watch a movie on my kindle and have an early night. My flatmates woke me up at 1am when they staggered in from someone's leaving do, it's like living with students!! :eek:Credit Card Debt:[STRIKE]£12991[/STRIKE] £12526

Knowing there's another bit tomorrow's not THAT great a deal even if the food is the best you've EVER tasted.... when it's "hmmmm" then you just wish you could win the lottery and eat what you fancy by waving a hand at your chef
Weather's vile here - fierce winds... the fence is moving and that was an entirely new stretch fitted by a proper specialist firm of fencers just 4 months ago! So, first thing Monday, I'll be trotting over to get that sorted out.0 -

Thank you for the welcome, caronc, and B17c. I used to only read the Kon Mari threads, for almost two years, and they were so fast moving I didn't have time to read any others. Now I think we're running out of things to let go, or at least have become stalled for some reason, usually by loved ones whose clutter is still in our homes.
Although my family have all left, the same can't be said of their possessions so I thought I'd come and mingle with the singles, in the hope of useful tips... like how to make a cheescake for one, or a substitute for bread, which I can no longer eat. TBH after cooking on a budget for six, for years, I find it almost impossible to think small.0 -
Not something I have myself - but I have a vague memory of cheesecake for 1 is something that can be done using one (or possibly two....) digestive biscuits as the base for them.
Can't recall on beyond that as to the filling part.
Vague idea that fruit on top could then be, say for instance, something like clementine slices from a can of them.
Someone else probably knows that one better than I do...

I would leave ingredients as is personally - but "taking them in the reverse direction" and:
use sugar as the sweetener
almond meal is basically almonds ground to dust and a sight cheaper to buy as almonds and grind them yourself - rather than buy readymade almond meal
(or you could use ground up digestive biscuit then I guess - assuming you're not banned from all flour??)0 -

Mash it all up together and fry 'bubble and squeak style' - I find that livens up most mistakes. mainly because it turns it into comfort food:D0 -
Hi Charis and welcome to the thread
Busy day today taking my Dad for his post op check after his cataract surgery. Not brilliant news really as it turns out that the drops he has been faithfully using for the last 2 weeks, despite them stinging his eye, have caused an allergic reaction and burned and blistered his eye :eek: He has more drops for the next 4 weeks and it should be healed within 6 weeks or so. He's not going to have the other eye done until it's sorted and I don't blame him.
No CFO at all today as Mum made me a sandwich followed by a banana and some grapes for lunch and I stayed for tea. Beef casserole, potatoes, glazed carrots, green beans and Yorkshire puddings which was lovely. She'd bought an Aldi lemon mascarpone cheesecake for dessert which was gorgeous with some cream leftover from my birthday tea on Monday!
Like B17c I have also had a Sainsbury's delivery this evening so the fridge, cupboards and freezer are looking very healthy. I've made my sandwiches for work tomorrow and Sunday and am sat watching Peter Kay then going for a shower and bed!
Karcher Did you go to the doctors for some advice re your hair? Sounds like you're having a tough time right now xx0
