This is a difficult one - the kids at least do not poo and dig up the garden every time I plant new plants (or at least I don't think its the kids!!):eek: They just throw all their sweet wrappers

I had a toasted cheese sandwich for lunch
. It made a change from a normal sandwich.
Dinner tonight (or mid afternoon) will be Italian liver. It's something I used to make in the 1980s and is a nice way to cook liver to make a change from the usual liver and bacon. I used to serve it with rice but I am going to have it with new potatoes and veg. This will use up some onion just leaving me enough for my shepherds pie later in the week, and some tomato puree which I'm not sure how long it's been in the fridge! I'm sure it will be ok0 -

Bit of a mixed morning, woke up at silly o'clock again, but dropped back to sleep this time and then it was much later than normal o'clock so just a quick instant coffee for breakfast, fancied toast but no time
Wet & drizzly today, just a darn good job I did go out yesterday evening and collect the windfall apples. Used them to make tonight's apple & blackberry, with hint of redcurrants, crumble. Currently [no pun intended] in a pan on stove top waiting to be assembled in the crumble. They made loads, but should do for a couple or more days
Remembered to but some Greek type yoghurt to go with the crumble as well, planning gone mad
Due to weather I have oiked single serving sized a Beef pie out the freezer in preparation for dinner, it is sat on work top defrosting as I type
That will join more of my runners and veg. And very MSE it will go in oven at same temp & time as the crumble. Should be nice and warming dinner
Lunch was cheese & HM 2013 vintage spiced apple chutney, new jar opened, and now I know it was worth the effort 4 years back slicing up the windfall apples. Here's hoping in 4 years time it was worth slicing all the runner beans for 2017 chutney

Afternoon all. I've had a busy day following the Flylady thread but the house is feeling much more like its normal self. The dog and cat have been tidied up and had their beds vacced out bedding washed tooLunch today was a toasted cheese sandwich (see how easily influenced I am HH!) and dinner will be half a takeaway curry that I froze ages ago with rice that I'll cook fresh. Not much left in for snacks atm and I have - shock gasp horror - ran out of bread! There are a few bags with crusts in so I'll have toast and make croutons for soup with the remainder. There's also a pack of 6 trusty crumpets if I'm peckish.
On that note I haven't made croutons before so is there an easy way? Caronc or anyone? I'll be making them with bread crusts and possibly the odd muffin (bread roll) that I've found too. Also can i freeze them in a box once made ready to sprinkle into soups?
P.S Faraway Do you have a recipe for apple chutney as my daughters neighbour gives her lots of windfalls every year. In fact last year he told her to pick what she wanted as he struggles to do it now at his age. My daughter didn't really want any but her Nan and I did lol.0 -

I make croutons by cutting the bread into rough cubes , popping in a bowl with some olive oil, a couple of gloves of garlic and dried herbs usually rosemary or oregano. Let them sit in the mix for a bit and then spread on a tray and bake in a lowish oven until brown. You need to keep and eye on it and fish out any that go too dark, turning every 5 mins or so. You want them crunchy all the way through. You can fry them but I find it uses much more oil. Once cooked drain any excess oil on kitchen roll, and pop in a sealed container once completely cool.

After the glorious weather it has been torrential rain here with parts of the town flooded at points. Needless to say I've not ventured out but tackled some much needed admin, at least the pots won't need watering tonight.;)
Breakfast was the usual toast and lunch the rest of the salad I made on Monday. The ratatouille bake I made last night was really tasty but of course there are LOs..... I'm not keen on having the same evening meal twice in a row unless I really CBA so what's left can be lunch tomorrow and possibly Friday. I don't mind lunch being a bit samey:). Tonight I think a fishcake and wedges will be had with broad beans, runners and wilted mustard leaf.
Cottage Pie, I have an emergency ready made one in freezer and it might getting hoicked out soon especially if the weather doesn't perk up......:)0 -
I have a lot of toasted cheese sandwiches and fish finger sandwiches/rolls... just not in the last 2 months. They are a backbone of my quick snack meals though. I've even been known to knock up the occasional Welsh Rarebit ... not often though, just once in the last year I think.

Not the best looking one, but I was impatient and in a hurry/rush to get to the eating bit
Tonight I'm having a lamb burger with red onions and a big bread roll. I'd grabbed two bags of the big bread rolls in 4ldi late last week as they were 30% off. I am too tight to pay full price and, even though they do fill 15% of the freezer space it was worth getting them. The onions, I bought a bag of them over a month ago, only used one so far.... so it's a good time to open the bag and see how they're faring. I'll slice one up and use about 1/4 of it and freeze the rest.
I might as well add some cheese to the top ...and a dollop of hot/chilli relish too ...
Maybe a few cheeky chips ....might as well.....
EDIT: Did that - made and eaten already
It was absolutely spectacular.... but the last of that box of lamb burgers... I think I'll try the same brand jalapeno ones next.

On the subject of samey meals I don't mind lunch being the same every day almost but not dinner.
My curry was gorgeous I had forgotten how nice it was first time round. I should start labelling things in my freezer like my Mum does. You can open hers and see tubs labelled things like 'V good chicken stock' 'chilli needs kidney beans and more stock' 'excellent beef gravy made by H (my DAD)' or 'stock - needs oomphing up' - She's a star0
