Filigree, Thank you for directing me to the cooking for one board. I spent some time reading the tips there and I have now started cooking larger meals and freezing the left-overs in single portions. Blindingly obvious but I had not thought of it before. Many thanks to you.0

I will agree that I hated cooking for just myself when I was at uni, so much so I ended up volunteering to cook for the others ( as long as we split the cost and we took turns in washing up
) I found it a lot more expensive to cook for one when freezer space was at a premium than I did for five (I mean in terms per head).
Anyone got advice to offer on HM cooking for one, what you can buy, that means you can have all the nutrition and dont have to fill/buy a freezer and still save money.
I know that this is a bit of a poser but it may benifit some of those who live alone and want to save space and money! And for those of us who are looking for some real Bargins that save cash but arent Junk!0 -
I don't actually have a freezer, and cook for one...
I tend to eat the same meal several times though. I'll make a batch of, say, chilli, and then eat it for 4 meals or so.
What I usually buy/eat:
Bread/pitta bread. Cereal. Fruit. Veg of all kinds (tinned & fresh). Tinned & dried pulses ,grains & beans. Cheese. Occasionally eggs/frozen peas (they just have to sit in the fridge and be used quickly). Rice. Pasta. Soya pieces. Tinned soup (occasionally)
What I make:
Veggie chilli with rice. Vegetable curry. Veg & barley casserole. Salads. Vegetable soups. Sandwiches.0 -
If I don't want to freeze I normally make something like a chilli, casserole, soup, or curry big enough for two (at most three) meals.
I ring the changes by serving each helping with a different staple and different vegetables. So it would be chilli and rice on day one, chilli on pasta on day two, and depending on how much is left, chilli with hunks of HM bread and butter, or chilli cheese dogs. the chilli cheese dog sounds nice Squeaky. I'll try it.
I cook for one, although do have the luxury of a freezer. When I am not using it I tend to make a lot of pasta sauces. A tin of chopped tomatoes with veg of your choice usually does two portions and will keep in the fridge for a few days. Alternatively I use a dollop of creme fraich with some nuts and some onions and a splash of white wine if I have some. I just make enough for one portion as onions, wine, nuts and creme fraich (in it's tub) will last a while in the fridge.
Otherwise i eat things like stuffed peppers - check out the recipe index for some ideas.

FWIW, if you're ever in Sainsburys in Burnley and see someone with a trolly full of reduced bagels and far too many carrots - that's me, I have no safety pin - but I am scouring the pavements of Lancashire looking for one.0
