    Make an easy rosti -

    grate some potatoes and onions together into a muslin
    Squeeze out as much juice as you can
    Season (a dash of cumin seeds is nice)
    Fry until tender.

    I make a Tuna Hash which my husband adores! It's one of those made up dishes that just works, so here goes (serves 2 hungry people):

    3 large baking potatoes, peeled and diced.
    1 onion, chopped
    1 pepper, chopped
    1 leek, sliced
    A handful of mushrooms, sliced
    2 cans tuna in brine, drained and flaked.

    Cover the potatoes with water, bring to boil and cook for 10 minutes. Drain and set aside. Fry the onion, pepper and leek in some olive oil, you can also add a knob of butter for extra flavour, until starting to colour. Add mushrooms and cook a little longer. Then add the par boiled potatoes and gently stir until it starts to brown a little. Mix in the tuna and season with salt and pepper to taste. If you like you could put in an ovenproof dish, sprinkle with cheese and bake at 200 deg for 15 mins.

    The vegetables can be changed to suit whatever you have in the fridge, but the onions are esssential for flavour. Bon appetit!
