    My son's DGF is Japanese. She cooked lunch for us yesterday.
    We had five courses:
    1. Chick pea and (various) mixed vegetable soup
    2. Mixed salad, somewhere between a green salad and a coleslaw
    3. A baked savoury dish with a sourdough bread base, vegs including mushrooms and peas, melted cheese on top
    4. Little pots of fruit salad, including plums, cherries, peach, banana, and a slice of lime on top.
    5. Lemon drizzle cake.

    Very nice, and we had well over our ten fruits and vegs!
    Keeping two cats and myself on a small budget, and enjoying life while we're at it!

    today so far
    brkfst was apple and pear with yoghurt lunch will be half a grapefruit HM butternetsquash and sweet potato with butter beans curried soup followed by fresh pineapple I make that 7 portions. Dinner will be something with spinach as it needs using up. Also had a HMscone with lots of cherries and sultanas in it together with HM jam so another portion there should make 10 quite easily today

    Breakfast was eggs on toast 0. Lunch cheese salad around 5 - berry jelly 2. Dinner will be veggie Bolognese with spaghetti - ingredients include red lentils, carrots, onions, celery and tomatoes around 5. Blood orange for a snack - so an easy 10 for me today.

    Chestnut and mushroom burger with side salad 3

    Dinner backed cod with lentil casserole and broccoli 3.
    So it's a 10 from me.
    Whilst I have the oven on this evening I'll be roasting some carrots for this dish which I can highly recommended - it sounds more complicated than it is:


    Moroccan-Spiced Roasted Carrot Hummus


    Makes about 3 1/2 cups

    1 pound carrots, chopped into 1-inch chunks
    3 whole cloves of garlic, peels left on
    4 tablespoons extra virgin olive oil, divided
    1 1/2 cups cooked chickpeas, rinsed and drained if from a can
    1/4 cup tahini
    2 tablespoons fresh lemon juice
    1/4 cup water + more to thin if necessary
    1/2 teaspoon ground cumin
    1/2 teaspoon ground ginger
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    1/4 teaspoon ground cinnamon
    1/4 teaspoon ground coriander
    1/4 teaspoon ground cayenne
    1/4 teaspoon ground allspice
    1/8 teaspoon ground cloves
    Fresh cilantro, minced, to serve

    Preheat the oven to 425°F. Toss the chopped carrots and whole garlic cloves with 2 tablespoons of olive oil. Scatter evenly on a baking sheet lined with parchment and roast in the oven until the carrots are tender and lightly browned, 18 to 20 minutes. Toss carrots halfway through cooking. Once cool enough to handle, squeeze the garlic cloves out of their peels.
    In the bowl of a food processor, combine roasted carrots, roasted garlic, chickpeas, tahini, lemon juice, water and all of the spices. With the motor running drizzle in the remaining 2 tablespoons of olive oil. Whirl away until smooth, scraping the sides down as necessary. Taste and adjust seasonings if necessary. If the hummus is too thick, add a little more water or oil and process until desired consistency is achieved.

    Hi everyone. I'm not doing so bad some days I don't get there but I think 7 is the lowest I reach but still better than 5 a day. some days I get 11 or 12 portions in. However, I am relying quite a lot on fruit and want to up my veg intake. Breakfast is proving difficult. is there anything else apart from eggs with beans/tomatoes/mushrooms? Also DH takes a packed breakfast and lunch to work. Lunch is ok as its mostly what we had for dinner the night before served up cold but breakfast is more problematical. he doesn't like cold cooked brkfst eg eggs and beans he also doesn't like avocado. Recipe ideas would be most welcome. Am trying to get away from museli fruit and yoghurt which is quite high sugar.

    Grilled tomatoes on toast are nice, oldtractor, but really it helps to get away from the traditional sweet/carb-based breakfast (which is a complete constrast with the cooked breakfast!). It's just another meal... for example orthern Europeans eat cheese/cold meat/fish/salad for breakfast; Indians eat dhal, etc.

    It might be worth thinking of different things for you and DH for breakfast as some things are more transportable than others. Would he be happy with a sandwich (cheese & tomato; ham salad; BLT) for breakfast if he's having leftovers for lunch? Or a nice salad and boiled egg/smoked fish?

    Breakfast today - half a grapefruit, roasted cherry toms, mushrooms, asparagus, sweet potato, peppers and broccoli. All veg that needs eating and a good way to do it.
