That is great Suffolk Lass. Thank you.
I need to wait until I can get some yeast to try your method.
In the meantime my second sour dough loaf has turned out better. The longer prove, helped maintain its structure and it was more of a dome shape. It tasted good too, but I put a couple of teaspoons of sugar in the dry mix, which probably offset the sour flavour.
I wish I had stolen more shower caps From hotels in the days when I used to travel for work5 -

That's a good alternative Baileys_Babe! - We have a whole plastic ice cream tub with packets of shower caps from years gone by. Normally replenished on our travels to and from Italy each year too, despite not being any work trips any more. That idea was a steal from the Hairy Bikers, years ago nowSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Loving the sourdough information, thank you all, especially SL. My worktops and kitchen table are once again full - but I'm hoping to clear them and get baking and crafting by teh end of this week.

Haha - we are working our way through the HM soap. Not quite as drying as many others. I prefer the silicon moulded patty tins to the loaf!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

I don't even bother dampening my tea towel to cover the bowl these days. Where did you get your 4lb loaf tin from SL? I'd love one of those. I need a scraper too as I was looking at a brioche recipe, but imagine all the bread-making places are sold out at the moment with the sourdough craze!Mortgage free 16/06/2023! £132,500 cleared in 11 years, 3 months and 7 days

Got a delivery of 12 new strawberries so need to prepare and plant those. I also have a Boysenberry to get in, and a Myrtle with a back story I have been nurturing all winter. Not sure what to do about my monarda, campanula and oregano with so many rabbits in the garden. Hopefully more planting out later too - loads is ready.
