Cooking for one

It's really hot here today, got to be the hottest day of the year so far, it feels a lot hotter than yesterday, so of course I have had the oven on
I went out early to Waitrose and did ok on the y/s front, I only picked up things on my list that were reduced and got a massive cauliflower down to 30p, some sourdough bread down to 52p from £1.49, raspberries at 69p, kale 35p, mushrooms 40p, salad bag 70p and buttermilk 10p. So I was pleased that even with the full price things on my list the shopping came to less than half than I had budgeted for, I love it when that happens
Before I went out I had had two slices of toast for breakfast, one with butter and honey and one with butter and strawberry jam.
At lunchtime I had a lightly dusted cod fillet with some new potatoes and peas. I decided to have my main meal at lunchtime so that I can just relax for the rest of the day because I find the heat quite draining. I was going to go for a walk around the park but decided that I is too hot for that.
As I had the oven on for the fish I decided to make some raspberry and white chocolate muffins (hence buying the buttermilk) to use up some raspberries that I had in the fridge, and to give me an excuse to open a bar of white chocolate that has been beckoning me every time I opened the cupboard it was in. So I had a couple of them for pudding with some greek yogurt.
Tea will be a cheese salad sandwich and another muffin or maybe two.
I hope that you are all enjoying the sunshine.0 -

Just got to "black cat" that, mine are in flower in the conservatory. A few hundred miles south makes a lot of difference. I will post a photo to clinch it, in the meanwhile I will keep you guessing for the next few days as to what I am babbling about:)

PN I was enthralled by 'Quiche-gate'...I find quiche highly overrated and often am left so disappointed by it I wonder why I bought it in the first place; so wouldn't dream of attempting to actually make one myself!
CFO here is non-existent. Yesterdays meals consisted of one scrambled egg, half a tin of cold beans eaten out of the tin after eating the before mentioned scrambled egg. Followed by 2 slices of toast with butter and cream cheese at about 10pm.
That'll be a fail on the 'cooking' front then but certainly only enough for 'one' with no leftovers'I'm sinking in the quicksand of my thought
And I ain't got the power anymore'0 -
Oh well and today's "spotted something I've not tried before" is udon noodles. Duly bought - and I'm now wondering what to do with them:rotfl:.
I presume I could do a stirfry with them (ie same as any other noodle then).
What has anyone else done with them?0 -
I've got a huge bag of fresh spinach that needs using but CBA to cook and there's too much for just one meal!
Will it keep better if I just wilt it down then put it back in the fridge to maybe use tomorrow/ monday/ tuesday etc'I'm sinking in the quicksand of my thought

You could do that but udon are best used in broth/soup dishes. Udon miso noodle soup for example.
My OH likes niku udon (beef udon).
Udon dishes can easily be made for one which is great.
So I have a potato mountain again. Saw a 4kg bag reduced to 45p yesterday and couldn't pass that by, I am weak. I see chips, mash, potato salad, baked potatoes etc featuring heavily in the next few weeks at least.
I am a vegan woman. My OH is a lovely omni guy0
