Cooking for one

I bought some yonks back when visiting the Gorge and said Wookey Hole, and bought the cheese of course. This one was £1 down from £2.5, use by today, which considering it has been sat in a cave for months is obviously rubbish dating
Because of this surplus I have now bunged one pack of fish cakes in the freezer, usual singles problem, food piling up but bargains still to be grabbed
I think that it is y/s bargains that are taking up so much room in my freezer at the moment, but like you, if there are bargains still to be grabbed and it is something I eat I tend to buy it0 -

Lunch - (sorted and soon to be microwaved) vegetable stew from freezer with courgetti (home done) and rice cakes.
Dinner - (will be) shepherdless pie from freezer with broccoli and salad leaves.
Will snack on fruit.
I have sorted out the fruit, and taken a home made nakd bar from freezer, I take for lunch at work. I pre do it so I just use a spork (I re-use the same one) as I can't bring myself to handle food without washing my hands thoroughly which takes too long at work. Being a cashier is not a clean job! I also have tomorrows breakfast soaking in the fridge; nutri-brex with coconut milk.
The OH is away and won't be back until just before I finish work tomorrow. Another reason for the microwave meals (need freezer space but yeah I'm not able to use the hob or oven without at least him supervising but usually him doing it all as soon as there is heat).
You're sounding pretty organised and these are tasty sounding meals ideal for when you're on your own and can't manage the hob or oven. :)I need to get better at prepping things that can just be nuked if I'm having a rough day.Hollyharvey wrote: »I find that cheese tends to last ages past its use by date, particularly hard cheeses.

I can't think of the last time I checked the date on cheese.... as you it keeps for way longer than the pack says:cool:0 -
Afternoon everyone,
I hope that you are all ok.
I have had a bit of a cba day food wise today.
It started ok, with scrambled eggs on toast for breakfast.
Then I met a friend in town for coffee and ahem...cake and a mooch around town.
Before I went out I had but the half of a chicken that I liberated from the freezer on Thursday on low with the intention of doing a roast with it today, but when I got back I couldn't be bothered. So I just did a cheese and pickle sandwich for lunch, and then had a crumpet with chocolate spread. I'm just going to have some of the chicken with salad bits for dinner.
Tonight I am meeting my friend again and we are going to another friend for the evening so I'm sure that we will have some nibbles there. She usually puts a few nice bits out.
Caronc your meals today sound lovely.0 -

I'm not CFO thoughI find it easier to make more of an effort when there is someone here to share the meal with and help with the prep:) Mind you probably it's just as well it's not every day or I'd be the size of a house and very, very skint.........;)

OH says I'm OCD when it comes to some things.
Meal prepping is certainly one of those things. There's shepherdless pie, vegetable stew, lentil soup vegetable chilli and vegetable curry portions in the freezer. I bulk cook most in the slow cooker usually with reduced vegetables, I can use the slow cooker myself but it's only good for bulk cook and freeze for meals. It's invaluable for days the OH isn't around or just needs a break from cooking for me. It takes substantial room in the freezer though. As I said a whole draw was full of them!
Being organised saves money. Home made meal versus popping to the supermarket for an easy meal such as soup well home is cheaper hands down. That and going shopping for me usually means buying things that weren't really needed. I wouldn't mind doing that rarely but it would cost a small fortune with how often it happens/is needed.
I am a vegan woman. My OH is a lovely omni guy0 -
I did get round to making my "Sunday roast dinner", all nuked of course.
Chicken breast, yorkshires, stuffing, mash, peas/carrots/green beans/sweetcorn, gravy. Didn't do roasties as I figured I could get that lot on the plate in well under 10 minutes .... and roasties would have added another 20+ minutes to it... so bugg4h them0 -

Sounds lovely:D though I would have held off for the roasties........:o
To be honest, I've never been that keen on them. There are so many ways that people make them (mostly rank) .... so they've never bothered me. They are a form of potato that's a good method of cooking spuds alongside a Xmas dinner or roast.... and that's it. Just "AN Other way of cooking a spud" really.
They're such a source of arguments too as everybody likes them different ways .... so it's a good thing I'm not passionate about them.0 -

My way is of course the best way (or so I like to delude myself LOL) :rotfl::rotfl::rotfl:0 -
I completely agree and I do mainly cook from scratch. I'm just rubbish at prepping a complete "ready meal", I was much more organised when I was working and cooking for a family

Ah that's a huge difference to the OH and I. It's, basically, always been cooking for one as different diets.
When we first moved in together the OH would comment how I was unable, for the most part, cook just one portion. It may only be me the food is intended for but it's usually 3+ portions.
The OH goes a different direction for cooking for one. You will usually find him doing stir fry, having package noodles, tin soup/ravioli, Mac and cheese, pizzas etc. Every now and then he'll do home made slow cooked meatballs in sauce in his small slow cooker that does 2-3 portions. He gets bored eating the same thing for days so the way he buys food is different.
It's crazy how different people who cook for one can do things.
I would have had roasted potatoes too. A roast for me isn't a roast without them. Probably because they are a huge bulk of one for me :rotfl: .I am a vegan woman. My OH is a lovely omni guy0
