what can i bulk out a tikka massala sauce with?

got a jar of T.M sauce to use up, I've got 2 chicken breasts, what veg could I add to it to bulk it out that won't seem random and will stretch the meal furthur?


I've got carrots, onion and brocolli to hand?

    Have you got any mushrooms? I usually bulk out stuff like that with extra mushrooms.

    Unless you're already serving some kind of dhal with it you could add cooked chick peas or split peas.
  • I use red lentils and chunks of sweet potato if I need to stretch it further.

    You could also try red/yellow/orange peppers - I found green too bitter - and/or cauliflower, butternut squash & even tinned sweetcorn - I've added these to most curry sauces to stretch the meal further.

  • I'd add peppers, mushrooms and times chickpeas, then add steamed broccoli on the side rather than in the sauce. Green beans work well, especially if you find ys sliced ones

    slice the onions and fry gently, slice the chicken breasts into strips - that makes them go much further - and means they get a good coating of sauce.

    I use frozen spinach, the whole leaf kind and fresh tomatoes. Small cubed potatoes and carrots will also work.

    I sometimes put parboiled potatoes into my curry - I tend to use the Patak pastes if not making it from scratch - if I'm not planning on serving a side dish (dhal, gobi aloo, brinal bhaji etc) with it.

    Just made a veggie one the other night, potatoes, onions, peppers, cauliflower, mushrooms and chickpeas. It was super yummy and stretched to five good helpings.
