Hope your mum is okay Cumbrialass.

On the subject of frozen onions we tend to buy them as a back up. I have been known to chop up a batch of fresh onions and freeze them into portions. My mum thinks I'm crazy, I do it to save time when prepping means and the reduce the waste.

Yes I just tend to set aside 10-15 mins and chop and then put into separate portion bags. Or I guess you could put it in to a big one should you decide.

I also do this with peppers and mushrooms :D

Glad to hear your Mum is doing well and coming home. It must be hard if you're an only child. I was an only daughter (two brothers) and helpful as my brothers were my Mum wanted only me to do certain things for her. I hope you're getting some medical help from district nurses (do they still exist?) etc. Taking care of someone who has limited mobility can be very hard. Wishing your Mum (and you) all the best.

Thank you Toni's friend , I know what you mean about brothers , daughters are needed more sometimes. Luckily my Dad is very good at most things , still very active in everything so a lot of the caring will be down to him. I am having some time off next week , and will do housework Sunday . It's all sent to try , but I am used to being busy. Luckily partner away for a couple of weeks visiting his mum in another country so not needed as much at home .

Mum is now home , with all her aids to make moving around easier. There is a problem with her chair though , so she is stuck in bedroom for the moment.
My dad I am going to have to keep an eye on , as he tends to overtire easily these days.

I have my granddaughter today , so will call to parents house later. Need to factor in time for my own housework as well today. Can see it will be late evening before I sit down again

On the plus side should be a NSD .

Glad that your mum is home, she'll rest better there and you will be able to keep an eye on both of them more easily.

Regarding the onions - I often chop (in the processor) a whole bag of onions then cook them slowly to soften, the divide them into several bags. Its then really easy to defrost them when I need them for anything and saves time and fuel. If I forget to get them out to defrost naturally, they are just fine in the microwave.
