    We too like to try and just cook enough and always over estimate. But left over veg gets turned into soup. Desert (usually a HM black forrest gateau) gets eaten over the next few days and the goose meat ends up in a sarnie (same as the ham) or a chinese noodle dish. Often FIL (80 year old widower) gets left enough for a few small meals if possible.

    I was just leafing through Hugh F-W's "Veg Every Day" book, and there's a lovely recipe in there for curried bubble and squeak which sound delicious. Definitely plan to try adding some curry paste to any leftover roast potatoes and brussels on Boxing Day.
  • Left over mince pies are great crumbled into hm ice cream and frozen. Mincemeat from the jar mixes well into yogurt too.

    Everyone else's ideas sound yummy.

    The leftovers are the best bits for me. I like a 2nd or 3rd Xmas dinner. Not all one the same day though haha.

    Picking from the fridge too, there's something quite naughty about standing in my jammies sneaking bits of this and that dipped into leftover cranberry sauce or gravy - yes cold! :eek:

    Anything leftover from that gets made into a turkey biryani with freezer dhal and a pot of soup.

    I don't do larger portions of puds or starters, I keep them to a small one off portion each. Hubby likes his cheese so that's him in heaven if I buy a few extra treats. Anything not used up (unlikely) gets frozen.


    Roll on the leftover Brussels :cool:

    We love leftovers so much so we have a gathering on boxing day or just after and everyone has to bring something made from their leftovers. Last year we had Turkey curry, Boston beans with leftover gammon in, chilli con carne with leftover roast beef in, smoked salmon quiche with leftover broccoli in, cheeseboard and potato pie and finished with fried rice with all the gubbins thrown in.

    Leftover christmas pudding gets grazed over with cheese and crackers or thrown into ice cream and refroze.

    My mum used to buy the biggest Turkey known to man!! And would be bashing meals on it for days, even the cat would be fed up of the sight of it by the time it was curried!

    There are 3 meat eaters for Christmas lunch and myself, I got a Turkey crown last year (states feeds 6) did the 3 of them for Christmas dinner and boxing day with salad and bits and the day after just enough for a sandwich or salad (sent dad home with on boxing day evening, with a third of what was left to do what he wanted with it) by the 27 th it was gone. Cooked as much potatoes as needed, and just a few veg as I serve them in dishes - can't get my head around who will eat what, just enough to put with a bit of cheese sauce for me.
    Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"

    The leftovers are the best bit for me. My favourites are Coronation turkey and turkey stroganoff.

    One of my colleagues makes Christmas dinner soup and it comes to work for about a week after Christmas day.
    It's all the leftovers from Christmas day whizzed together. That includes the veg, stuffing, Yorkshire puddings, cauliflower cheese, pigs in blankets. All in gravy.

    Have to say the Melanzana rissoles are the biz.

    Probably like bubble and sq.

    But I put everything except bones! into the blender for a pulse or three.

    Then scoop it out and make into burger portions and place in flour, egg, and breadcrumbs. Then on to the pan. YYYYYUMMM
  • We don't tend to cook too much veg, but carrots, peas, new potatoes can be added to a Russian salad, which is a must for boxing day. Also - I love the glory that is the magnificent Christmas dinner sandwich with a side of pigs in blankets and pickles.
