Apple Spice muffins
9oz (225g) plain flour
3tsp (15ml) baking powder
1/2 tsp (2.5ml) salt
1 1/2tsp (7.5ml) mixed spice
4-5oz (110-140g) fine white granulated sugar
1 egg
6oz (170g) finely chopped granny smith apple
5floz (150ml) milk
3floz (90ml) vegetable oil or 3oz (85g) butter melted
2-3oz (60-85g) sultanas or chopped walnuts
Optional topping
3tbsp (45ml) soft brown sugar
2oz (60g) chopped walnuts
1. Preheat oven to 375-400F (190-200C) or gas 5-6
2. Sift flour, baking powder, salt, spice and sugar
3. In another bowl beat egg with fork, stir in chopped apple and milk, followed by oil or melted butter
4. Pour all wet mix onto dry in one go. Stir until just combined adding optional dried fruit/walnuts in last strokes
5. Spoon into paper cases and sprinkle with topping
6. Bake 20-25 mins until tops are lightly browned and slightly springy.
7. Cool in tins for a few mins as they are more moist than other muffins.
**In my experience, these work much better if the batter is lumpy but no visible floury clods. It also makes 10 or 11 rather than 12, if you under fill the cases they don't rise as much and look a bit mean0 -
Could I use choc chips in place of the blueberries??0

Check out the old fashioned recipes in the Bero book. We used to use it all the time. Quick, easy, cheap etc. Get DD to help. Gingerbread is fantastic. Very moist but with a sticky top..... just the way it should be.

I got this off EBay and its fabulous. Fancied trying the gingerbread, definately will now :T0 -

Lemmon Drizzle Cake.
Tray bake 9 x 12inch Greased,floured & lined.
8oz SR flour.
6oz marg/butter.
6oz sugar.
3 eggs.
2 table spoons milk.
1 table spoon lemon juice.
Cream butter & sugar together,add a little flour and 1 egg,beat,& repeat untill all eggs used.Add rest of flour,milk & lemon juice beat until well blended.
Turn into baking tray put in ovan gas 4, 350f / 180c for 35-40 mins or until skewer comes out of cake clean.Put cake to one side.
Topping.
6oz Sugar
enough lemon juice to make a med thickness of paste when mixed with sugar.
!!!!! still warm cake with cocktail stick all over top and pour/spread mixture over.Leave to cool.Top will go crunchy and lemon will seep into cake.
I like my cake sharp so only have 4oz sugar and a thin paste/liquid topping.
Lime also works I use Jif,you can also use oranges.If for some starnge reason this is not eaten within 2 days its very nice with custard.Some of the best lessons we ever learn,we learn from our mistakes and failures.the error of the past is the success and wisdom of the future.:wave: :beer::j0 -

If you'll be in the house all day, baking bread from scratch is really theraputic. I started with Delia's simple white loaf (I'll post the link if you like). I've then adapted the recipe for all sorts of bread.
I make bread rolls, and when they're cool put them into an airtight bag in the freezer. The Small Pengiuins then have one each in their lunch boxes.
Thriftladys' thread Adventures in Bread Dough is full of great suggestions, too.

I have a bread maker so could make bread as well i suppose on the day and just bake in the oven as i think it comes out nicer when oven baked.

What's your muffin recipie - I've tried making them bebore but they never seem to turn out right!
