Baking day...What to bake???

  • Julip Crrot cake is very moist but dont worry it wont be arround long:rotfl:

    8oz self raising flour,
    2 level teaspoons baking powder,
    5oz soft brown sugar,
    2oz sultanas
    4oz carrots washed & grated,
    2 ripe bananas mashed,
    2 eggs
    1/4 pint sun flower oil.


    I use a large loaf tin but a 8inch round will do just as well lined and greased.
    Put flour & baking powder into a large bowl ,stir in sugar add sultanas,carrots and bananas and mix gently.Make a well in mixture add eggs & oil beat well untill all blended.
    Some times I will add 2 teaspoons mixed spice just for a change.
    Put in tin at gas 4,350f/180c about 1 1/4 hours or skewer comes out clean.
    When cool hide until requred or OH & smalls will eat it :rotfl: :rotfl:

    i might have to try twink hobnob's. everyone is always talking about them. there famous now. i don't wanna be left out and be the only person not to try them.

    Muffins keep very well in an airtight box and some actually improve with time as the tops get a little bit squidgy and moist. Lemon poppyseed and apple spice are my favourites

    Its a bit of a cheat because I use the ones from the Susan Reimer book but happy to share for those who don't have it.
    Will post when I get home from work :)

    I actually just backed some Blueberry muffins and Mmm Mmmm they turned out so good. I ate one everyday for a week..I'm blueberried out now but they were so yummy with a cup of tea and friends and family love em' too. :)

    110g/4oz plain flour
    110g/4oz butter
    65g/2½oz caster sugar
    2 eggs
    1½ tsp baking powder
    125g/4½oz blueberries, or equivalent in frozen blueberries
    pinch nutmeg


    1. Cream the butter and sugar together then slowly add the eggs, mix for 3 minutes. Add the flour, baking powder, nutmeg, and refrigerate for at least an hour, preferably overnight.
    2. You can now add the blueberries OR place a spoonful of muffin mixture into each muffin case, filling each to just over half way then push about 8 blueberries into each muffin .
    3. Bake in an oven set at 200C/400F/Gas 6 for 20 minutes or until golden on top. Serve with cream and or your fav. cuppa. :T
