Baking day...What to bake???

I want to start having a baking day now DD is at school so she has nice things to take in her lunchbox and we have nice things in the cake tin, but i'm not sure what to bake. i am quite good at making cakes (even if i do say so myself) but i normally make 'fancy' cakes with frosting and fancy icing but i just want some simple cakes, i already have a good recipe for banana bread so if anyone has any other good tried and tested recipes pls pass them on.

    how about things like victoria sponge , chocolate fridge cake , flapjacks , cookies , malt loaf , jam tarts , rice cripsie cakes , museli bars , shortbread , scones ( can vary these such as cheese or fruit) . can't think of any more things at mo which are simple.
  • Hi ! This is a great idea but you will either have to make double ammounts or put your tin out of reach:rotfl: :rotfl: my kids would eat the lot if allowed.
    Cheese or fruit scones,chocolate chip tray bake,lemmon drizzle cake,carott cake with sultanas not frosting (goes yuky:rolleyes: )mixed spice bisc.Cheese & bacon palmas,jam tarts,mini doughnuts (you can get a bake tray from Lakeland for these,it might seem expensive but you will make loads long term) dip in glace icing,chocolate 100/1000s or plain sugar.Mini fruit turnovers,Plain tray bake sponge topped with glace icing and Giant chocolate buttons or Harribo for a special treat.Mini Danish pastries with marzipan,jam or fruit.

    This is a great lunchbox item. It's my Great Aunt Mattie's 'Chinese Chews' recipe.


    4oz S.R. flour
    6oz castor sugar
    Pinch salt
    2 oz margarine or butter
    1-teaspoon vanilla essence
    6 oz dates
    2 oz. Walnuts
    2 eggs

    Method

    1. Chop fruit.
    2. Sieve flour and salt
    3. Mix in sugar, fruit and nuts
    4. Melt margarine
    5. Beat egg, add with vanilla essence and marg. to the dry mixture and mix all well
    6.Spread in tin (8 inch square approx)
    7. Bake at 400 degrees for 15 minutes

    Anyone have the link for the hobnobs saved? I made some oat biscuits on Monday from a recipe on the storecupboard thread but they were a bit dry.
