i cant bake muffins to save my life

    honey - re your scones, when you 'cut' them out, make sure you just make one fact plunge movement, DON'T turn your cutter. This helps the scones rise much better.

    re: muffins, don't over beat the mixture and try the foil on top method. This works for me!

    glad you liked them catznine what did you use as filling chocolate?You can also put jam they're really yummy!
    re: the skewer I wanted to add that but its name wouldn't come to mind so I thought I'd put cut in half as I always do so I can eat I mean taste.....;-) it

    One thing I forgot to say earlier - I've burnt things in the oven even when it's been set to the right temperature because I've put them too high on the shelf. Nowadays, even if the instructions say "high shelf" I make sure that the top of what I'm cooking has three or four inches (approx ten centimeters) of clear space above it.

    Saint Delia advises not mixing the mixture too much - it should look lumpy (which is why I can cook them, I guess :o ).

    Anyone got any more info on the silicone thingies? I was thinking of getting some but not sure now!

    I really dont think that it has anything to do with the tins as i have tried to make fairy cakes before with a norning tin and it came out the same as the muffins!

    I used chocolate chips! I have used jam in my other recipe - just put 2/3 muffin mix in cake case then spoon of jam then put other 1/3rd muffin mix on top! Yummy!

    I used to make my own version of Bisquik baking mix and then use this to make muffins, pancakes, waffles etc. I haven't made it in ages but will have to go look up recipe and put it on the recipe index. Might be useful to someone!

    Thanks for all the advice, come to think of it i think that i did get kinda carried away with the mixing! i will try again 2 night as i have alot of rasberries to go through. :beer:

    That site is also full of lots of other good recipes. It's an american site though so you need a measuring cup thingy...

    & I use metal muffin tins with paper case things...

    My oven isn't that old but it is too hot, I take ten degrees off for most things. This would explain being cooked on the outside but not on the inside. Also like Squeaky says, the oven shelf is important, I only cook things like pizza and roast potatoes on the top shelf.
