i cant bake muffins to save my life

I used the Susan Reimer book as well although I agree I can never make the quantities that she says, I always seem to have less mixture (or bigger muffins!) than she quotes.
One of my favourite recipes is on the muffin thread here though posted by Arkonite Babe for apple and oat muffins, that's gorgeous for breakfast.
