    Today has been NSD no.1 of the week, I'm hoping to bag at least 4!

    I've had a really productive day today.

    Got some more wedding bits (I don't count these as completely separate budget). Found some invitations I much preferred, got some thank you cards, rsvp mini cards I can put in invite envelopes and table numbers! Very productive. I'll take the other invitations back and get a refund on them! :)

    Planning on cooking leftover chicken tonight - chicken and leek pie with mash and veggies :)

    This is a place where I can be honest, so much m being honest here. This last week has been a write-off! I only managed x2 NSD, I've over spent my personal spending money. Not looking good and I've got 2 and a half weeks left until pay day.

    There is a silver lining though, we are well within food shop budget and that is looking good. Hopefully they'll be money leftover which can go straight to emergency fund and top that back up. I've had a productive morning so far - cleaned downstairs - washing some bedding. I've got to pick up some bits later from Asda (stuff I've ordered for the wedding) and I can see my last credit card payment (£25 direct debit) is about to go though which will mean the credit card is paid off. I'm not declaring it paid until I can see the balance as £0.00 though!! So even though this months feels very, very, very difficult there are some good points that I can't ignore. I've got £6.00 spending money to last until pay-day though which is a bit depressing!

  • Menu plan for week Commencing 12th February

    Sunday - Pork casserole with dumplings
    Monday - Tuscan chicken with tagliatelle
    Tuesday - Chicken tacos
    Wednesday - Home made goats cheese and red onion pizza with salad
    Thursday - Warm Tuna salad
    Friday - Chicken burgers in brioche buns with chips
    Saturday - Quorn spaghetti bolognese with garlic bread and salad

    Not looking too bad! :)

    Sorry to hear you've not been well. This cold weather is rubbish. Let's hope spring comes quick and we can all have less colds and bugs. :)

    An idea about your budget, next month mayeb take some out of your food budget and put it in your spends? Just a thought.

    Tuscan chicken - toss chicken in a little flour and brown. Put aside.
    Make a tomato sauce with chopped tomatoes (from a can), onions, garlic, mushroom, peppers, sundried tomatoes and chopped olives. Add zest of lemon and squeeze into sauce.

    Put tomato sauce and chicken into casserole pot and cook in oven for 45 minutes.

    We serve with tagliatelle or crusty bread.

    I don't think I forgot anything there but I'll double check. :)
