the link in post #11 explains it, it's not just simple drying out, it's some sort of sub-molecular thingy that's accelerated at fridge temperatures
if refrigeration is the best way to store bread, why don't the supermarkets have it in refrigerated cabinets?0 -
Sorry to go off topic, but, Swan it's the same with eggs.
Some people say that they are best kept in the fridge, but they aren't refrigerated in the shops. I don't keep mine in the fridge.

afaik, you're not meant to keep eggs in the fridge, can't remember why though, so you're doing it right... most people don't, do it right I mean
EDIT ... update, I've just been trying to check the eggs/fridge thing, I've always been told not to refrigerate them, I've been Googling & some sites are recommending keeping them in the fridge, maybe it's changed because of the salmonella scare?

I wrap mine in cling film and keep it in the fridge.
The crusts soften a little - but it does keep noticeably longer than in the breadbin.
This is especially true of breads with a low salt content, I've noticed. Probably because salt is a natural preservative.
(Eggs, always in the fridge; and allow them to reach room temp before using. If I remember)

I make my own bread - 2 loaves from 750gms of flour etc. and lots of seeds, let it cool, then slice and freeze. Toasts brilliantly this way and makes lovely fresh b&b within a short time left out; sandwiches also stay very fresh by the time they're needed.CAP[UK]for FREE EXPERT DEBT &BUDGET HELP:

Would much rather freeze bread than keep it in the fridge...something I don't like about the latter. On the occasions when I am organised I wrap 2 slices at a time in cling film...means that it defrosts really quickly
