    Egg
    900g/ 2 lb.
    Potatoes
    Method
    method: 1. Peel and grate the potatoes.

    2. Beat the egg and mix with the potato. Season with salt and pepper.

    3. Put in an ovenproof dish and cook in a preheated oven at 180*C for about an hour. It is ready when the top is crisp and slightly browned, and the centre is soft. You may want to grate some cheese on top for extra flavour and cook until it melts and goes slightly brown.

    The best ever comfort food for me is cheesy mash with a poached egg on top. If you want to make it vaguely healthy, mix a few cooked peas into the mash, or have it with baked beans.

    Havn't read the rest of the thread but what springs to mind is a potato bake using layers of potato, cheese and onion and then mixing an egg and some milk together and pouring it over.

  • Ingredients - Potato, Leek, Cabbage and Cheese with a little nutmeg if you like. I have also seen other variations of this recipe.

    Boil some old potatoes, leeks and cabbage in same pan. Add potatoes first as they obviously take longer. When done, season and mash up together, spread out in a baking dish and grate cheese on top. Bake in oven for about 20-25 minutes, moderately hot. Delicious. You can add the nutmeg to the mixture if you wish.

    Just done this for my tea with sausages and baked beans. I topped it with cheese (Red Leicester) it was delicious.

    I halved the quantities as there are only 2 of us and I didn't bother peeling the potatoes, because I halved it, it only took 30 minutes to cook.

    I cooked it in a pyrex dish, next time I will grease it as some of the spud stuck.

    My DH who is the world's fussiest eater even liked it.

  • Egg and potatoe curry gets my vote.

    Fry a chopped onion....for a couple of minutes
    Add about tablespoon of curry powder... mild or hot... your choice. Let it cook for another couple of minutes
    Add a pint of stock and a tin of tomatoes... chopped also.
    Add your uncooked potatoes... and let simmer till they are cooked.
    Boil your eggs, till hard boiled
    Peel the shells off the eggs and add to the curried potatoes.

    Simple and yummy
