I know how to do cheese sauce - but was wondering about the mechanics of cheese and onion sauce? How do you do that please?
A quick way is to finely chop the onion. Put into a bowl and cover. Microwave for 45 seconds until soft.
Make sauce by mixing 1 heaped teaspoon of cornflour with a little cold water, adding to 1/2 pint of very hot milk. Add grated cheese plus onion, stir, and microwave for 30/45 seconds unitl thickened.:T0 -

I sometimes find myself with too many potatoes in the veg rack going stale so I:
Cook them in their jackets in the microwave.
Cut them in half 'lengthways.'
Scoop out the flesh and mash in a large bowl with a knob of marge and salt, then stir in lots of grated cheese and chopped onion OR diced cooked bacon and chopped mushrooms.
Return mixture to the potato skins - well-heaped.
Freeze the lot and reheat 1 or 2 in microwave when needed and grill tops till nice and crispy.0 -
(a variation of Spanish Potato salad)
Potato salad, made with mayonnaise (homemade is best) some veg e.g peas & green beans, boiled eggs, chopped through it and on top. Normally garnished with roasted red peppers and capers.

There's a recipe in the recent tesco food club magazine for a potato and leek frattatta using eggs and bacon....I am going to have a go at that for tea.Praying at the church of MSE should be compulsory!

I do this with corned beef hash. Cube some par boiled spuds and mix with cubed corned beef....add to frying pan with softened leek and fry gently. transfer to oven dish and press down firmly. Add a dash of worscester sauce and make 4 little wells in the top. add raw eggs to the wells and bake in oven until eggs are set.
serve with baked beans and brown sauce!! works out about 50p per portion.0 -

Most interesting things come with using these as a base. If you can add some flour, fat and milk/water you have quiche of various sorts depending if you have a rather of bacon, tomatoes, mushrooms, broccoli, peas etc.
Gnocchi? Gnocchi Carbonara (ish) with a white sauce and some leftover ham or bacon.
I’m sure there’s some sweet stuff with potatoes and eggs – potato scones maybe?
I could make it better myself at home. All I need is a small aubergine...
