  • In some parts of Spain, tortilla is soft, almost like scrambled egg with onion and fried potato in. This is how my family have it, passed down from my grandpa. Just fry some onion and add some boiled potatoes until they're heated through. Then add some beaten egg and keep stirring till the egg is cooked through. We have it with peas, sweetcorn and brown sauce.

    the chinese cook their fried eggs like that. deep fried egg is the best thing ever!!!

    We always had eggs like this when we had egg and chips when I was young. We always knew them as 'Bird's nest eggs' because the out side edges go a bit brown and crunchy and look , very vaguely, like a nest.

  • Okay, it's cheating a bit, but if you add pasta, cheese, onions, bread, and some store cupboard stuff to the eggs and potatoes you can have:

    - egg and chips
    - scrambled egg with chopped onions and black pepper (on toast, grated cheese optional)
    - chopped onions, grated cheese and cooked pasta fried gently into a kind of stir fry (try it, it's fab, the onions go really sweet and the cheese goes really gooey)
    - cheese, potato and onion bake - slice the potatoes and onions really thinly and layer a casserole dish, alternating layers, and seasoning with salt and pepper, pour a bit of milk (or cream if you're feeling spendthrifty) over, and put some grated cheese over the top. Bake in a medium oven until the cheese melts and the potatoes and onions are nice and soft.
    - French bread/eggy bread, dipped in beaten egg and fried
    - poached egg on toast
    - jacket potato with cheese and onion topping
    - yummy mashed potato with a bit of milk and butter - real comfort food
    - cheats chips - don't peel the potatoes, just scrub them, chop them into chip shapes and put them in the oven till they're nice and crispy (you can sprinkle salt and pepper over them before you put them in there, some people in my family also like a spray of olive oil or similar)
    - pasta carbonara (bacon optional) style
    - cheese toasties
    - cheese and onion toasties
    - potato cakes, made with mashed potato and chopped onion, nicely fried up until brown and crispy
    - pancakes/omelettes
    - fritters
    - scooped out jacket potato boat things, like the ones Tex-Mex style restaurants do, with cheese and onion fillings

    And if you add in tomatoes the possibilities double again. Okay, I'll stop now, I'm hungry!

  • I do corned beef hash and DS fries eggs to go on top. I can of corned beef serves 4 of us, and it's really filling.

  • There is a great website www.CookingByNumbers.com
    which lets you input what you have in the cupboard/fridge and then suggests what you can make with them. Sometimes it comes up with a menu that includes other ingredients but then it tells you what you need!
